I kind of made these today. I used your recipe, but i left the dough out to prove for about 2 hours, lightly kneaded it, and then shaped the rolls. I left them for half an hour to rise. The time in the fridge would have run into a busy time for me to bake them. Baked them for 30 minutes as ma Ma doesn't like well fired. It worked for me today, but i will try to follow your complete method.
These are not just rolls - they are Glasgow morning rolls 😋 The rest of Scotland doesn’t know what it’s missing! Just leave the dough to next day and much less kneading than most bread. Only faff is that you are right, the dough is very sticky. But just need to accept that as you make the rolls. Comes together in the end.
Look great! I like the dark broon wans! Throw some butter on and then a pack of roast chicken tattie chips to make a chip buttie. Slice of Black puddin' and a fried egg. Slice of your Lorne Sausage. The best!
These rolls look very close to Mortons rolls, never been able to get them on the east coast but every time i go to Glasgow and walk past a shop selling them it's like an unwritten Scottish law to stop and buy some! Definitely going to try this recipe 😁

I’m also exploring the idea of baking a lot of baked potatoes. We have Idaho potatoes here and then I froze a whole bunch wrapped in plastic and then foil and I’m gonna see how they go to make my own little containers of jacket potatoes to heat up in the air fryer for dinner.
5 mins in a microvave, then rub with oil, salt, and pepper. Cook for up to 25 mins depending on size in airfryer at 200°C uncovered turning every 5 mins always gives me a better baked potato than in my oven. Nice crispy skin and fluffy inside.

I would definitely get bread flour. It gives a better chew and structure to bread and rolls. You should be able to find it next to the all purpose flour at the grocery store. Finding the lard might be a bit hard if you’re in the US. I’ve had luck finding it at Target of all places. Or if you have a local butcher.

Bread flour has more protein not yeast. Bread flour gives a better structure and chew to your bread. There is no yeast in bread/strong flour. You add yeast to the flour to make it rise.

If doing it by hand there are a number of kneading techniques for a sticky dough I've discovered a slap, roll and quarter turn.
For a great snack you can't beat a lovely crusty bread with some butter and jam. And these look absolutely scrumptious!
