      It's very unusual for a Japanese person to have a view like that, in my experience. The Japanese are, on the whole, VERY particular about the way things are done, and about one generation learning to do a skill exactly as the previous generation did it.

      The American mentality is the issue.

      We need more of this! I know the shorts are your “bread n butter” but bring back the 5-15 min videos… remember always start with “I LIKE THIS PLACE” and make merch with that saying and the names of some of the restaurants in the back.

But I get to travel with you when its not an option to move from where I am , at least for the moment. Good content . Videographers often try to explain too much whats going on and they take a piece of the experience away .

    I had to read the comments to formulate what makes your channel so pleasant and compelling. The sushi chef hints at it, too: food as the work of craftsmen and craftswomen, taught by their fathers and mothers or through hard work and trial and error like this sushi chef. Maybe some of these cooks you showcase put in hours at French Laundry or Chez Panisse or some other frou frou place, but they're making food with their own low-key, deep-rooted sensibility. It reminds me of Anthony Bourdain's criticism of Alice Water's penchant for fetishizing food, invoking the example of cooking eggs over wood fire. So many channels here are foodpohrn, and every bite needs to have rare components made with novel technique. There has to be a point where fatigue settles in and all you want is a solid slice of pizza.

    To my casual eyes, the interview seems to have been more difficult than previous ones, in that it was hard to get straight answers. How was it for you?
    Also, I may be jumping the gun, but does this mean you will be exploring DC food scene soon? If you are, I hope Baltimore is not too far down on your list!

      Hey - yes this whole week will be DC content 🙏🏻. I didn’t make it to Baltimore but I’d like to, feels like I just scratched the surface of the DMV.
      In terms of the interview - yes a bit difficult. But that tension is what makes it good I think 👍🏻

    Hey Rob, didn't know where to put this. Im Central Jersey born, Philly raised and family in DC. Covering these gems as you do is vital. Keeping it real, showing love, while not putting on a place in a way that could lead to it losing its charm takes an artful approach and you are doing.
    Wanted to say thanks and mention that organizing your playlists section is something slept on by creators on the platform. It makes it so easy for us viewers to just focus in on a area. Really appreciate seeing I can find all your videos, from say North Jersey, in one spot.

      You gotta remember; English isn’t his first language. I don’t he literally meant, there are no craftsman; he was more trying to convey that in the US we don’t focus on APPRENTICESHIP. Actually being taught in the field, in the trenches- old style. We get shove into college courses, that actually depersonalize the love and experience of learning on the job in certain ways and building yourself into expertise by investing long amounts of time into the craft as opposed to sitting in school, learning nothing that is associated with the actual job you want.

    I like this chef a lot and believe he’s got good ideas about living life well. But you’ve got to find what makes you excited to get up and go to work every day before you can become a true craftsperson, and sadly many people never find that, whether they are in the US, Japan, Italy, wherever. It would be wonderful if we could take time to explore our options when we are young, but that’s getting harder and harder to do as the cost of living rises higher and higher. We are all stuck with more and more bills to pay and fewer opportunities to find our passions.
    I’m lucky in that I did find a profession I enjoy, but I would not say it makes my heart beat faster just thinking about it. But I’m satisfied with a good life.

    Yeah but learning from others, especially from their mistakes, helps you get there faster and stay their longer. Why spend 20 years to figure out something someone can teach you in one hour, even if that thing takes a couple of years to master. Far better than the 20 years. If we used his logic on school there wouldn't be much progress.

      It would be nigh on impossible for him to be completely or even mostly self-taught. I also found his manner kind of unnecessarily rude (I'm not American either, so am not biased r.e. the America bashing). Maybe he's one of those guys you have to spend a bit of time around before you click with him, though. It's a short video, so who's to say.

    I’ve taught my children since they were young that college is a complete waste of money unless you know 100% what you want to do for a living for the rest of your life requires a degree. Go into trades, make money, and use that to live a life that you want instead of living to work to work to live. Apprentice. Etc.

I’d maybe take the 7 to Bolivian Llama Party to try a salteña, then continue to 74th street and go to Angel for dinner for mind blowing Indian food. More Manhattan side - hamburger America. In Brooklyn go to commodore for the hot chicken sandwich.
