If you’re interested in seeing how Chinese BBQ is made, we filmed a video with Jack where he showed us the process from beginning to end!

In Hong Kong the super traditional style is charcoal (one last restaurant left in HK) so there is a bit of crossover there

It's interesting that chinese business are so focused on cost cutting which can result in inferior quality. It's why chinese products are associated with poor quality, it's so ingrained that the chinese cook asks about that. Whereas american doesn't always think that. Then again it's also expected that when you buy chinese stuff to expect cheaper price whereas it's more accepted or tolerated to pay more for American products. Like the American BBQ can easily charge $25 or more a plate and ppl pay it. Whereas chinese BBQ charges $25 or more you might not. Lastly chinese are more about saving face, don't think he's being as honest whereas Darian was very honest with his chinese BBQ reviews willing to give lower scores. I can't imagine everything is 10, that chicken definitely isn't a 10 for the chinese cook given what he said.

This is so great. I’m Chinese and my father’s a retired chef. I started smoking briskets a few years ago and never crossed my mind to ask him to try as he always preferred Chinese food. He was over one afternoon and my wife reheated some smoked brisket for him. He tried it then froze. Picked up another slice and look at us “what is this??? It’s so good. What sort of meat is this? How did you do this???” He kept eating in disbelief

Those people are the same who think US cuisine is equal to McDonald's, it's mostly a superficial thing out of envy, ignorance and the fact some feel "colonized"; it's also about politics and wars so they're just hating the governments, not the average citizen or the culture as a whole, as a matter of fact we grew up with American music and films, we imported several things that are now part of our everyday life, and to be honest we're not that different, some won't admit that though. Much love for the US from Europe (Italy)!

I’m a Belgian, and before I was 16 I’d already lived on 3 continents. One thing that was mentioned several times in this video is that bbq brings the world together. Good bbq is good bbq.
As a teenager I got my first taste of Texas bbq and boy, was it good.
In Belgium’s countryside, all they know is grilling and they call it bbq. And then there’s little old me, lovingly mixing my own dry rub and bbq-ing my meats overnight or getting up at the crack of dawn to make sure dinner is done and delicious by 6-8 pm. The hardest part is to get the correct cuts of meat. People here want their beef lean and mean. They breed their beef lean. So I need to rely on imported beef to get the proper marbling.
That being said, I’m starting to get converts. Whether it’s US/Texas (ish) style bbq, Chinese crispy pork belly, bbq duck, or any other type of lovingly bbq’d meats.
I’d love to see a collab between these two chefs, a true exchange of recipes and skills fusing together.

When my mother tells me she followed one of my recipes to the letter but the end result didn't taste as good as when I make it, the difference is the amount of love that goes in. Forgive me if I'm wrong, but I think the chef meant that he's having second thoughts about gas, and is seeing it as being more expensive than wood. This would be in line with what he said when they were looking at the wood and he said something along the lines of "wow it's cheaper than gas".
Very cool video though. Love this content. I wish we had more videos like this, especially with Chinese east meets west style videos since we have such a saturation of Korean and Japanese videos of this sort. It's nice to hear an older generation Chinese person's genuine thoughts on things outside of the usual content they're featured in.

4:41 I use Cherry wood when I BBQ. I prune my Cherry trees to get the wood. If anyone reading this wants to contact me about making a deal on Cherry wood let me know. When you cut up the pruning's from Cherry wood that entire area will start to smell of Cherry. I live in a Zone 4 area of the US and the "Wild," or "Rum," Cherry is Zone 4 Hardy. It grows fast and is a hardwood with very nice grain. It does bear small very sweet fruit which birds love. I also use the Cherry wood as scales on knives that I refurbish. Cherry wood has a reddish hue with very interesting grain patterns.
