Vegetable Sambar Recipe | How to make south Indian sambar | south Indian sambar recipe
Sambar is a south Indian lentil and vegetable stew is a comfort food usually served with piping Hot Rice. This traditional sambar is hearty ,super flavourful and loaded with vegetables, spices and herbs. It serves good with white steam rice, idli , dosa, medu Vada etc. It is a staple in most south Indian house holds .
South Indian Sambar Recipe
1 . Wash 1 cup of tur dal with water
2. Add the washed dal to the pressure cooker
3. Add water
4. Turmeric powder and cook until the dal is cooked
5. Mash the dal and mix well and keep aside
6. For Masala
1. Heat oil in a pan
2. Add coriander seeds and fry well
3 .add jeera
4. black pepper corns
5. Cinnamon sticks
6. Cardamom
7. cloves
8. Curry leaves
9. Dry red chillies
10. chopped onions
11. garlic pods and fry well until it turns aromatic
12. Turn off the flame and add freshly grated coconut and mix well
13. Cool down the mixture
14. Then add the mixture in a jar and water to form Masala
For Tempering
7. Then heat oil in a vessel
8. Add mustard
9. Curry leaves
10. dry red chillies
11. Onion shallots
12. Drumsticks
13. Brinjal
14. Chopped Tomatoes and salt to taste
15. Add Grinded Masala and fry well
16. Cook the masala for sometime
17. Add the cooked dal to it
18. Add required quantity of water to adjust the consistency and bring it to boil
19. Once it starts to boil add Tamarind water
20. Add jaggery and mix well
21. Add water if required to adjust the consistency and boil for sometime
22. Then garnish with chopped coriander leaves and curry leaf and turn off the flame
23. South Indian Sambar is ready to serve
Taste good with white steam rice, idli,dosa,Vada etc.
