Rhubarb BBQ sauce, rhubarb syrup, and a sweet treat

  • When I got a chance to harvest a lot of free rhubarb, I ignored both my injury and the vacation preparations to make a rhubarb BBQ sauce, some rhubarb syrup, and a sweet treat. While I share it all, I ramble on about the myth of the Tragedy of the Commons.

    Kate, you’ve made that rhubarb look amazing. Isn’t it exciting to take something given to you and turn it into so many delicious foods? It amazes me how we’ve lost touch with our food and don’t understand things our grandparents knew like over harvesting and foraging…

      I strongly believe that knowledge and community will be the two things with a chance to turn this all around. Misinformation for the sake of individuals has been rampant, especially in recent years, but I think we are slowly reaching a point where people don't believe it all anymore. They don't want to be sold snake oil. If I can educate a few people along the way, I've done what I set out to do :)
      It is always so great to make something from scratch that I have not made before or to make it again without all the weird ingredients I never understood. Did you know citric acid isn't usually from lemons? I didn't until about a year ago. No, it's yet another place subsidized corn gets squished into to make more use of a plant that we don't need to grow as excessively as we are. I mean, there are places in the US where it is cheaper to grow corn and dump it than to grow something that is needed.

    Congratulations on your new food processors Kate! Thats awesome. I love rhubarb. I love it chopped up in pancake batter. I still coat it in sugar first because of the tartness but its a wonderful way to spruce up a regular pancake. Thank you for another great video and have a good night! 🙂

    Rhubarb in general, yum! I know the decision to go with two machines wasn't an easy choice, but sometimes dedicated equipment makes good sense, esp when our bodies need help. I have never tried it but rhubarb lemonade sounds incredible.

      I absolutely agree. Dedicated equipment can make a lot of sense. But there is such limited room in my kitchen that it was indeed a tough call. Rhubarb lemonade is excellent. I hope you get a chance to try some.

    In my local eco grocery store I heard that the root side of the rhubarb that is thickened containes calcium to compensate for the acid and therefor not to throw it away ! Hint hint 😊

      I am definitely researching that 🙂 I know about the calcium as a counter to the acid but did not know the plant might provide that. Cool!

      I'd describe it as a tart/sour cranberry-raspberry-lemon combination. Very nice, assuming you like those flavors. It needs rather a lot of sugar to be tasty.
