Food Bank Haul With Meal 6/20/22 - Homemade Rhubarb BBQ Sauce and Canning It!

  • Come along as I whip up some rhubarb BBQ sauce! Make your abundance of produce last by learning to can it up!
    Rhubarb BBQ Sauce
    3 cups Rhubarb
    1/2 White onion
    1/2 cup White vinegar
    3.5 cups Brown sugar
    1.5 tsp salt (I added a little more)
    1.5 cups Raisins
    2 TBSP Dry Mustard
    2 TBSP Paprika
    2 TBSP Black Pepper
    2 Tsp Smoked Paprika
    2 Tsp Chiptole Powder (or chili powder)
    1.5 Tsp Red Korean Pepper Flakes

    Does everyone like the canning recipes with the hauls or just meal ideas or a mixture? I've been switching it up with what I've been doing after I show the haul and would love some feed back on it! Thanks so much my friends!!

      I enjoy both cooking recipes and canning recipes. My experience has been that canning recipes will bring more long-term traffic to your channel. At least that has been what I have seen on my food blog for the last 10 years. Mixing baking, cooking and canning keeps things interesting.
      A few years ago, when I was going to the food bank, I ended up with too much cranberry sauce. I made barbeque sauce out of them. I found a recipe that included sweet chili sauce. So, I bought some bottles of that. It was my first time using and eating sweet chili sauce. I canned the cranberry barbeque sauce and used it up. I didn't post it as a canning recipe at the time but just a quick cooking sauce. This past month I created a sweet chili sauce recipe to can up. I ended up with 12 half pints of it. I didn't like the Ball recipe for Thia Chili sauce. I drew my ideas for this chili sauce from videos posted from other countries. When you gain experience in canning and understand safe canning techniques which includes techniques that are safe not tested by USDA, you can create recipes to preserve what you have an abundance on hand to use.
      I just call this technique you used to can your sauce, as safe traditional canning techniques. Rebel canning just makes it sound dangerous and that isn't the case. For many years the people at the food preservation dept of USDA came from the home canning industry. They would stay a few years and return to the industry. So some years Ball would have someone there to represent their business interest. Then it would change out to someone from American Standard. The whole idea was to get you to use their products and they made people fearful that had not been around household canning or eaten any home canned foods on a regular bases. I am glad to now see a return to teaching safe traditional canning.

      @@janetnelson4729 that cranberry BBQ sauce sounds amazing! I'm probably going to try that! I hear ya with the rebel canning term. I wasn't quite sure how to put it another way, but I like your explanation of them just never testing it and that's why they don't recommend it.

    You're pretty amazing if no one has ever told you. 4 kids and you cook dinner, make a homemade BBQ sauce, and can that BBQ sauce! Ah, the look of those jars on the counter filled with sauce was so beautiful. When you added all those raisins after all the sugar, I wondered if it might be too sweet. But it turned out fine with the meat so its all good.

    Margo from pa. Pa Dutchman, 82 years young. Have learned so many tips and tricks from you. Only canned fruit in season, afraid of the pressure gadget. Watch the village homestead with Renee from Mich. Also Homestead Tess. She makes things from her local food bank. I am not eligalble but then I don’t need it, but have lived on both sides of the fence. Am blessed and know it at my age have not the energy to wait in lines or home an or grow food. Love seeing you put different ingredients together and it all works. Blessings to you and your family. Ps read classics and you snow skit hiding from your little ones reminded me of woman in white.

    Need more shows like this the lady that runs our local food bank said A lot of people don't take the food cause they don't know what to do with it. What is sad is that they don't teach people how to use the food. I have offered their church to teach some cooking classes and canning classes haven't heard back from them. Good job.

      Thank you so much! I had a friend tell me I should see about teaching cooking classes at the food bank. They have a huge kitchen on their second floor! Might be worth looking into! That's kind of you to offer at your church! That's a great idea. I do agree that a lot of people don't know what to do with the food they get from the food banks! It can be quite random stuff! I appreciate the support and encouragement!

    Adzuki beans are super sweet. My grandma would eat them with vanilla ice cream or shaved ice. I love red bean ice cream or or waffles.

    Perhaps it was sweet because you added 23 cups of sugar instead of 21. At 08:49 you said 18 + 5. Great video. I do like seeing what you do with your hauls.

      Math is not my friend. haha! I think I may have just said 18 instead of 16 though because that measuring cup I was using is an 8 cup one. So, it probably was 16 cups...but who knows?! Haha! That extra salt helped! And good catch!

    When I was a kiddo my parents were gardeners & they grew A LOT of rhubarb. My mom would wash, chop & freeze it & she'd peel & can some of it too. All of us would help her & she'd give us some peeled rhubarb stalks & a little bowl of sugar & we'd dip them in the sugar munching while we helped, it was like super crunchy sweet & tart candy. My sister & I especially loved this

    Pork belly tacos are awesome in my experience. I think it's awesome that you got adzuki beans! Those are hard to find, expensive compared to other types and apparently prized by bean fans. Rhubarb is such a nice treat. Nothing like your usual haul, but you always seem to get some unique items somehow.

    Adzuki beans are really good! Japanese chefs cook them, puree them, and mix them with sugar for dessert, but you can cook them any way you'd cook regular red beans. They'd be really good with that ham! The pork belly is a great find! You can roast it in the oven or cook it like any pork roast. If it has the skin, just take that off before cooking it. You could crisp up the skin i n the air fryer for homemade pork skins.

      I'm growing a bunch of different beans for drying again this year. And adzuki beans are a new one I am trying this summer. Also chickpeas, red beans, great northern, pinto, arikara, black beans, navy beans, cannellini beans, painted pony, purple hull peas, black eyed peas, all for drying, then canning them. They were really fun to grow last year. So I wanted to do some different ones this year. I've been canning now for 44 years. And I found I really like having them canned ready to go.

    God bless you for stating the obvious about reusing jars. Our grandmothers and their mothers so on and so forth etc have been reusing damn jars for the last century or more. My god it drives me crazy that ppl don't see how illogical it is to not just reuse them.

      I couldn't agree more! When i was first started canning I couldn't figure out why other's wouldn't try it. The rubber seal on store bought jars is the exact same as canning lid jars. But a lot of people are afraid of getting sick from home canned goods and these big canning companies are putting info out that you can't re use them or lids and people just listen. I feel like it is a marketing ploy to get more money from us. I tried it on with some jam first. Just a couple of different jars to make sure they worked and they did! Some are going on 2 years now, sealed with jam in them.

    Pork belly tacos girl ❤ Get you some tomatillos, boil them with a few jalapeños, then put them in the blender, add cilantro, garlic , onion, blend and cook the pork belly in the salsa. Good eating. Make you some tortillas and bam delicious tacos.

    Lol, it’s been a minute, but in case you haven’t had time to look it up-adzuki beans are a common red bean, popular in Asian countries. Usually cooked with sugar, they can be added whole to dishes like oatmeal or blended to a refried bean consistency and used as a filling for cake, cookies, and my favorite, pancakes! My family recently moved from WI to Taiwan and beans as dessert was a bit of a culture shock 😂❤

    Hey darlin',I have been in the hospital for 7 days and got home Thursday evening,i was diagnosed with cellulitis bad in my right leg and foot,they were swollen 3 times their size and bright red,,mrsa,wound infection,uti,and i was septic,i was given 2 different antibiotics 4 times a day,I have a lot of catching up to do,please keep me in your prayers as i found a good size lump by my right breast,I noticed my right leg and foot are swollen again and are hot to the touch,going to call my infectious disease dr. later this morning,have a blessed day!!!!

    I have only reused other produce jars and very rarely have one that doesn't seal, several of the beautiful older ladies at church save me their jars and plastic containers that I use to freeze my juice. Reuse is my mantra.

    Here’s a fun fact: turns out women fall into poverty in their later years because they make less wages throughout their life and end up with less savings and social security driving them into poverty because of increased cost of living so thanks for making these videos and normalizing the need for food when people need it ❤

    Could you use the granulated sugar and add one T. of Molasses to cookie dough for the brown sugar without mixing?

      I agree! It's really not bad when you mix it with the meat, but I'm not sure if you can reduce it or not. The sugar is what helps preserve it.

    How do you know the used jars have sealed? Do they POP when they seal. When I was a kid and my mom canned we always listened for the pop. I never could can like my mom.

      Yes the pop, but more importantly you can't push the top button down. Whenever you have a commercial jar you know there is a button on top that you can push down and it'll jump back up. That is how you know the jar is open and not sealed. When it is sealed the top of the jar is smooth because the button is sucked down. That's how you can tell if commercial jars have sealed or not!     🙋🏻‍♀️Could you run your emulsion blender as soon as you have all your ingredients in the pot to break down the chunkx to release the flavor quickly to before simmering the sauce then re-blend at the end to make sure the final consistency is preferred??🤔

      I don't see why not! The rhubarb has some fibers so not sure how it will blend up before hand. If you give it a try let me know!

    Easy way to get the labels off is to just use some vegetable oil, I spray it on them after letting them soak in some water, and it comes right off. Or you could use some goo gone but it's just oils, so why spend the money.

      To degrease after the oil label removing, use vinegar and soap and maybe some baking soda mixed together. Cuts through quite well. I don't have a dishwasher so I wing it. But I'm sure a dishwasher would work beautifully to remove the oils obviously

    The reason your bbq sauce was so sweet was that the recipe called for 8 c. Of chopped rhubarb for each batch not 3 c.

      I can't believe mine are showing after hers!! She has almost 400k subs!! Which she deserves, she is amazing! I just watched her video about her pregnancy so far and I love how open and honest she is about the whole thing (except NOT telling us the gender!! WHY BECKY!!??) I messaged her on Instagram when I was first debating about starting my channel and she talked with me and convinced me to go for it! Love her so much and she doesn't even know me! Haha

    I hope this isn’t a rude question but you always say you are a family of six - I only heard you talk of 3 children and your husband and yourself. I am just curious if you our caring for a family member? My 80’yo father in law who has Parkinson’s is living with us.

    I like your videos and appreciate your positive attitude about getting help from your food bank. But I would encourage you to direct your viewers to learn all the proper canning methods by going to the free online USDA canning manual. With food prices (and other daily costs) skyrocketing, there are a lot of beginner canners watching you tube videos to learn. Unfortunately, there is much bad and even dangerous advice being given. I am hoping you will continue to post, but also help newcomers to learn safe and tested canning methods.

    Your recipe is way off. One batch calls for 8 cups rhubarb not 3. And if you have 20 cups rhubarb there is no way you would need 21 cups of brown sugar. 24 cups of rhubarb would only call for 7.5 cups sugar. That is why it's so sweet. And now your BBQ sauce is not shelf stable.

    You are putting your viewers at risk by telling them it's ok to reuse canning lids. It's not a marketing ploy and 100 plus years of research and testing proves this. And, you are putting yourself at risk for possible litigation against you for making these claims and someone dies from taking your advise. Best start putting disclaimers on your videos.

      I make sure to tell people that if they aren't comfortable re using lids or commercial jars then don't. Use a new lid every time. Most people can't afford to pay for new lids every single use, especially with rising cost. If re using lids works, I'm going to do it to say money. I have been doing it for 2 years and all is fine with my products so far!
