    I love you, Albert! I'm making this stew TODAY!
    My adult disabled son and I live in poverty now, but we didn't always. I love to cook and haven't eaten food from restaurants in years because I can't even afford fast food. Thing is, I wouldn't eat fast food now even if I was wealthy! For me, it's always too salty and greasy, and just tastes bad. I never get food poisoning from my own cooking.
    You are my favorite chef because I love the flavours you pack into your dishes; which are economical, healthy, delicious and satisfying! I especially love your presentations that make me feel like I'm visiting a dear friend... a friend who can cook the food I love AND show me easy ways to make it myself. Your smile and energy are pure sunshine on this rainy day here in SoCal!
    Today it's cold, wet, gloomy and I woke this morning feeling lower than a snake's belly in a wagon rut. I'm sad because I couldn't afford to get my son a Christmas gift this year. My car isn't running right now, so I can't go anywhere even if I had money. A neighbor let me drive his truck to town once this month so that I could pick up my son's meds and buy as much food as I could get for $251. That's how much my son and I get from EBT (food stamps) to buy food for a month for both of us. I know that sounds like a lot, but that works out to be about $4 per person, per day. People spend more than that per day for a cup of Starbucks, yet they glare at me hatefully at the checkout line when they see my EBT card. It's as if I don't deserve to benefit from the thousands of $$ in taxes I paid over decades while I _could_ still work (since age 15). I try to ignore their hateful comments, but it hurts. The one I hear most often is, "She probably drives a Porsche (or Cadillac, Mercedes, etc)". Nope! I bought my 20 year old car with a busted window and no AC four years ago, for $800. The car that no longer runs. Once, a woman actually followed me to the parking lot, taking video with her cell phone so that she could "expose" me as a "welfare queen" driving a fancy car. Boy, was SHE disappointed! 😂
    I'm extremely grateful for that $251 per month, and I've learned to cook good nutritious meals by watching sales, buying markdowns, and keeping plenty of staples as core ingredients. All kinds of dried beans and peas keep well for years, along with rice. My big tomato plant is still producing a few tomatoes so I have enough for this recipe, I have chickens, so plenty of fresh eggs, I bought 10 pounds of potatoes when I shopped, I've got elephant garlic growing in a pot, and good spices I get from my Pakistani friends who own an Indian food market down in town (I live off-grid on solar power on a very remote property). They import high quality fresh spices from Europe and Asia that are a fraction of what grocery stores charge (and much better). My friends are Hindu and vegan, so I love shopping there to get even more options for meatless meals.
    The only ingredient I'm missing is the saffron threads. I was eyeing your lovely BIG jar of saffron enviously, and thinking it probably costs more than my car! I guess that's why I've got a car that isn't running. 🤨
    It's all going to work out, it always has. I'm grateful for all the problems I don't have. I can see, walk, I'm reasonably healthy for my age, I have enough food, I can make my own clothes, and I have a house to live in. The rest is just "stuff". If people in Somalia saw my house (a mobile home) they would consider me to be very wealthy and fortunate. They would be right. I try to keep things in perspective and it leads to an attitude of gratitude.
    I hope everyone has a wonderful holiday season filled with love, family, and plenty of yummy food!
    Sorry for getting on my soapbox to complain about the "Karens" who don't mind their own business. That woman who followed me to the parking lot is to be pitied. She must be so miserable, so I shouldn't have let her get under my skin like that.

      That lady should understand that she's one bad accident away from also living on EBT. The division people in this country sow over food stamps, when theres people who use their excess of money to buy up houses from locals in towns they never visit to turn into overpriced AirBnBs (to say nothing of the ultra wealthy that """earn""" more money than entire countties) is so desperately sad. I wish you and your son all the best.

    The second I saw this, I HAD to make it! I fell in love with Spanish food when I lived in Rota for a year. This is FANTASTIC - though Alberto - I didn't have any fresh potatoes (and the stores are INSANE this time of year)... so I used Chuño (Papa Seca) instead. I'm still eager to try this with FRESH potatoes, but the Chuño version is SPECTACULAR. So happy I saw this!!! Happy Holidays to you - and again, thank you for this wonderful recipe. Anyone reading this - TRY IT, IT'S WONDERFUL.

      @@SpainonaFork I just had this for dinner a few minutes ago. It definitely lives up to your promise that just a few of the right ingredients can make something truly great. This was delicious and satisfying without being heavy - the perfect potato side. I used Yukon Gold potatoes and they were done perfectly at 18 minutes. So quick and easy for, as you say, so much goodness.

    It's the middle of summer here in Australia, but that still looks like an amazingly delicious soup which I wouldn't turn down!       Great question! I'd love to hear of alternative spices to use, also. You must be a "super-taster" too! How much do you hate the taste of "soapweed", aka cilantro? 🤢
      As a teen, I was not aware that some of us taste things differently. I went on a fun 3 week trip to Mexico with family that are from Mexico City. My aunt owns a Mexican restaurant in Ft. Worth, TX and her food is fantastic. When she made us homemade tacos with fresh cilantro picked from a family garden, I saw everyone chowing down and talking about how delicious the food was. A took a bite of taco and immediately spit it out, then scraped my tongue to try to remove that nasty soap taste. I got angry because I thought my cousins had pulled a prank and put actual soap in my food! They assured me they didn't and even took bites of my taco and declared it delicious.
      Cumin is the ground-up spice made from cilantro seeds, so it makes sense that they both taste bad to us. My son loves cilantro, so when it's in the fridge I sometimes have to hold my breath so I don't gag! I wish I liked it. It makes a dish look pretty and it's healthy.
      I'll probably use smoked paprika instead. If I had fresh Italian parsley I'd add that, but I don't.

      It has eggs which are very young chicken

      I could be because of the presentation looking at it from above. Just like garbanzo
      beans. They're often called chickpeas because several together look like small chicks,
      OR it might have something to do with the eggs. (I quite often think about those
      things, too. I have to stop that.) 😄

    I am curious. Why is this called spanish potato stew? You are adding cumin, bay leaf and resembles ancient Indian potato style. Is this indo influenced? The only add-on ingredient I noticed is bread. or its called spanish coz the potatos are from inland spain? lol Interesting. Will try it.
