LEARN HOW TO MAKE A STEWPENDOUS WARM VEGETABLE STEW RECIPE TODAY!
LAY HO MA (how's it going in Cantonese)! Winter for me is all about keeping cozy with deliciously warm recipes. Join me in this episode and learn how to make a thick, rich, and umami packed veggie stew recipe that will show winter who's boss! Let's begin
Ingredients:
1 red onion
3 pieces garlic
2 carrots
3 celery stalks
3 russet potatoes
200g king oyster mushrooms
2 plantbased sausages
2 tomatoes
2+2 tbsp avocado oil
2 tbsp tomato paste
few sprigs of thyme
1 cup red wine
1 cup frozen peas
5 cups vegetable stock
1 1/2 tbsp soy sauce
1 tsp dark soy sauce
chopped parsley to garnish
Directions:
1. Dice the red onion and finely chop the garlic. Chop the carrots into large bite sized pieces and finely chop the celery.
2. Chop the russet potatoes into large bite sized cubes. Quarter the king oyster mushrooms and tear the plantbased sausages into bite sized pieces. Dice the tomatoes
3. Heat up a stockpot to medium high heat. Add 2 tbsp of avocado oil followed by the plantbased sausage. Sauté for about 5-6mins until the sausage is nice and crispy. Set the sausage aside
4. Bring the stock to medium heat. Add 2 tbsp avocado oil followed by the onions and garlic. Sauté for about 5-6mins
5. Add the celery and carrots. Sauté for a few minutes. Then, make a well in the middle of the pot and add in the tomato paste along with the leaves from a few sprigs of thyme. Give the pot a good stir
6. Add in the tomatoes and stir. Add the red wine, turn the heat to medium high, and stir the pot. Allow the stew to bubble away for about 2mins
7. Add the russet potatoes, king oyster mushrooms, frozen peas, and the vegetable stock. Add the soy sauce and dark soy sauce. Give the pot a stir, then simmer on medium low for 25-30mins
8. Transfer about 3/4 cups of the stew into a blender. Blend on high for a few seconds, then transfer back to the pot. Give the pot a good stir
9. Plate and garnish with some of the crispy plantbased sausages and freshly chopped parsley

Did you use the apple sage Field Roast sausage in this?
My only very minor suggestion is to add the frozen peas last, after everything has reduced. I find this keeps the peas from being mushy. Love the recipe!
@YEUNGMANCOOKING. A few questions, but first, I have watched countless videos and wow man, great content!! Off the wall my friend. 1. What would be recipes for breakfast? 2. Out of curiosity, what would your bloodwork look like with the sugar and sodium intake? I ask due to a meat eater but would ease into the next question, what does most of your protein look like from these recipes? And last would be calorie intake as I don’t see this in your extras. Thanks so much.
We use these recipes often. Due to Chronic Kidney Disease we have to eat a low sodium diet. Wife has found low sodium recipes on line for soy sauce, oyster sauce, and hoisin sauce. Worchester sauce is an excellent substitute for fish sauce. Using all of our homemade sauces makes Yeumgmancooking recipes very tasty and low sodium.@@scottpetrie8707

Thank you so much! I’m 71 years old, became a vegan about 3 years ago and this recipe was just yummy!
Theo
Glad to hear 🙌🏻👨🏻🍳😎
Did you use a Crockpot? Or a regular Soup Pot?
@@user-ir8sd4sy5l I used a regular soup pot.
This is honestly incredible and I'm so glad you became a vegan!
Yo tengo 72 años y me hice vegana hace 8 años y me encantó esta y otras recetas que ya estoy haciendo. Saludos
Was having a rough couple of days. Watched this 3 times in a row. It was the warm hug I needed. I'm going to make this the day after Christmas as a gift to myself. Happy holidays🎄
Me too!
Happy Holidays!
So glad to hear and happy we are cooking together 🤗
Happy holidays @@OperaJH 🤩
Love "the warm hug in a bowl", so beautiful and delicious! You can't find commercial food prepared so lovingly.
This was delicious! I didn’t have dark soy sauce, so I just used a bit more regular soy sauce. I also used crimini mushrooms. Added the peas at the end. The chopping takes some time but it’s worth it. My husband kept saying guest quality! Thank you Wil.
Amazing to hear ☺️🙌🏻
The difference in prep for me is after adding the wine I actually turned the heat down to let the wine simmer slowly until it becomes syrupy and infuses the veggies with a mire intense flavor. 👍
That blender tip is a game changer
I added chickpeas and frozen organic corn and left out the sausage. Fun change up for picky kids 👍🏽
One of the best vegan cooks out there ❤
Wow, that is the kindest ☺️
Beautiful, as usual, Wil. One thing - I noticed the green on your potatoes. While generally harmless in small quantities, it can have a bitter taste. Also this, from the USDA: When potato tubers turn green there is usually an increase in a glycoalkoloid compound called solanine. Consequently, it is important to store potatoes in the absence of light to prevent greening. Tubers with a high concentration of solanine will taste bitter, and can be harmful if eaten in large quantities. To be safe, it is best to not eat the green part of tubers." You do not need to discard green potatoes. Just peel the skins, shoots and any green color; that is where the solanines concentrate.
👌🏻👌🏻👌🏻
You make cooking look like the most luxurious comforting experience ever. The stew looks so delicious.
Hi from England, I made this stew tonight for the family. It was absolutely outstanding, even my son who is not vegan enjoyed it. This will be one of our go to meals and we all loved it .
So great to hear 🙌🏻🥳
I love how it seems so natural and obvious now to combine Asian and European seasonings and flavor profiles.
WONDERFUL VEGETARIAN STEW...YOU'RE A GREAT CHEF...FUN 👍
You have inspired me a meat eater into trying more vegan foods. Thank you.. your soothing voice and dishes are amazing 👏
Looks so warm and comforting. Thank you! Wendy❤️🇺🇸🙏🏻
My Catholic parish enjoyed this stew at Friday Lent potluck supper. Thank you.
I’ve been looking for a hearty vegetable stew, this is terrific. Puréeing some of the stew to add back in is the twist that makes it. Another hit. Thank you.
🙌🏻🙌🏻🙌🏻
I agree, it makes the stew seem richer and more filling.
Guys, made this twice now. Soooo yummy! He's right; it tastes like a warm hug in a bowl. A go to recipe for us now. Thank you!
🙌🏻🙌🏻🙌🏻
Even before I watch this video, I'd like to thank you for your gourmet vegan dishes. I'm a wannabe vegetarian, struggling with the lust for meat. I have reduced it very much, a little more effort needed.
Your recipes are here to help vegans. Such delicious guilt-free food! I just enjoyed your lentil soup.
Dear Wil, Merry Christmas! I trust this festive season finds you in good spirits. I wanted to take a moment to express my gratitude for the wonderful, healthy and delicious recipes you've shared. They have not only been a delight to my palate but also quick and easy to prepare. Your clear instructions have made following them a breeze. As we bid farewell to this year, my wish for you is a year ahead filled with happiness, joy and continued culinary creativity. I eagerly look forward to more of your amazing recipes.
Oh wow! What kind words and wishing you the best over the holiday season. Catch you in the next episode 🙌🏻👨🏻🍳
Wow this looks wonderful. Can't wait to make it. Been a vegetarian for 56 years and I am still finding wonderful recipes! Thank you, Wanda 🇨🇦
Another fabulous recipe! You make gourmet cooking look so easy 😊
🥳🥳🥳
Yum, I can absolutely smell this luscious stew. Thank you for your hard work bringing us such wonderful recipes.
My pleasure 😊
I'm curious about the 2 different soy sauces used. I have never used those ingredients in soup/stew before. But I am game! Anything Wil Yeung makes is delish!
You're The Best... WILL
I cooked this the day before yesterday. It's a really, really tasty stew. As for the quantity: it's easily enough for 4 people.
Just in time for cold weather.
🙌🏻👨🏻🍳 keep warm
I made a huge pot, it's absolutely delicious, comforting and so healthy! Brilliant recipe, thank you. I skipped the wine and the result was fantastic, just in case anyone is wondering if the alcohol is necessary. I will experiment with replacing peas with beans for versatility, oh and also I used shitake mushrooms which fit in perfectly.
you can substitute the wine for balsamic vinegar and its good also
וואו הייתי רוצה לשבת לארוחת צהריים איתך ולאכול את הנזיד המהמם הזה.
ממש יצירת אומנות 🏆💙💜
You make cooking seem so appetising, and eating so enticing. I actually want to get down to eating with those recipes.
Your voice is sooo soothing, work is incredibly clear and entertaining, and your puns are hilarious 🎉😅❤!! WELL DONE ALWAYS!
Excellent specially for this winter . Thank you
Most welcome 😊 and keep warm
OMG! I just finished making this stew! I can't explain the taste. Never imagined there were these flavor profiles!
I had to sub not by choice. We r expecting another snow storm one after another & thought I had all the ingredients. Use zucchini instead of celery, used baby bella mushrooms. Couldn't find dark soy sauce used coconut amino. Also used green beans instead of peas. I want to try the original recipe next time!
KING of Deliciousness
☺️
Thank you, chef. I made this today and it turned out extraordinary. I was a little worried about the lack of seasonings but I knew the soy sauce had plenty of salt to them so I trusted the recipe and I must admit I ate two bowls back to back and can go back for a third no problem. Delicious and easy and healthy, I’m very very pleased 🙏🏼
I am salivating as I watch.
This looks amazing. I don’t enjoy plants based meats, so might use lentils. Yum!
Gonna leave this window open as I think I'll revisit later this week and make this. It looks fabulous!
I made this soup, but added some chilli powder, black pepper, and cream. I also used some spicy chicken sausage instead of the veggie sausages.I served it with some cheesy garlic and herb baguettes. So yum!
I used mild spicy italian sausage and it was great!
That looks so good!
Love the recipe, thanks.
Great for these cold days!
Agreed 🙌🏻🥣
I made this tonight for dinner. It is soooo delicious! Thank you😊🎉🎉
Glad you liked it!! 🙌🏻👨🏻🍳
Looks Yummy. Thank You 💙
Looks delicious! I saute everything in a tiny bit of water without the added oil (doctor's orders) and it still is amazing. What a great idea to blend a few cups of the soup and add it back to create that creaminess and the "warm hug in a bowl."
I'd never of thought of liquidising some of the stew to thicken the broth, very interesting, will try that.
Looks delicious , love your cooking 😊
Looks really nice Will, Thank you for the recipe. I like how you blended a bit of the soup to thicken it out, Ive never seen that, what a good idea, ppl mostly use a thickening agent, cornflour, plane flour etc but that blands the taste out n u gotta add more spices, I'll use your way now.
Incredible! Thank you!🙏🏾
UMAMI here's your big hug for this great bowl of stew my favorite. 😊
😄
Just cooked this for my dinner - first time viewer. Thank you
Wooo! That’s wonderful and happy to have you here 🙌🏻
Looks amazing
So thankful you are still adding healthy recipes at this time of the year. I look forward to them and always have a few stand-by's of yours for good measure. Have a very Merry Christmas!
You as well 🙌🏻👨🏻🍳
I made this tonight. First made my own Veg stock (search for Great British Chefs for a good recipe) before doing a double quantity of the above. As with all Will Yeung recipes this is absolutely spot on. It retains crunch and flavour despite being rich and warming. Just amazing. It has made enough for 8 portions. Only comment is that I used 250ml to 1 cup for the stock and that is too much. You may want to use about 750ml to a litre if doing the same.
This recipe doesn't appear in any of the 3 current recipe books unless I have missed it. (BTW - Highly recommend the signed books - the print quality is just lovely) I assume another book may be on the way (?) .
I’m definitely making
OMG The Stew is back and I Love You and I can't help it. Unbelievable. 😍
Sooo wow!❣️
This looks delicious. I will try it.
What a fabulous idea to blend only a part of the ingredients to create that creamy thickness and keep the rest chunky.... 👌 looks sooo yummy!!!
You do the same kind of thing when making a certain potato curry dish to make the sauce thicker .
@@cherrymetha3185 uuhh, that sounds great as well :)
You boil some potatoes . Once boiled you set aside a few pieces of potato ( or a few baby potatoes if that’s what you’re using ). You take a pan add oil. Once oil is hot you add mustard seeds and a couple of curry leaves . Then you quickly add the boiled potatoes . Stir Then you add ground coriander and cumin mix , turmeric, chilli powder and salt to taste . Stir . The boiled potatoes you set aside you mash up and add a dollop of ketchup. This thickens the sauce . You put that mixture in the pan with the rest of the potatoes . Stir . Then you add some hot boiled water to the pan . And put on low heat with the lid 3/4 on. .Once the sauce is little bit thick but not too much , it’s done ! You garnish with fresh coriander .
@@cherrymetha3185 i will definately try that!!! Thank you so much 🤗
@@FatimaAli-bk3cy You’re welcome ! 😘.
Like a work of art 😊
