Tortilla is such a versatile dish that you can eat anywhere; as a child we would go on a picnic and Mom never forgot to put one plus chicken, salad, etc. tortilla was a common staple of our school lunch and even today when my wife doesn’t feel like cooking she prepares a tortilla that we all enjoy. Such a simple yet delightful dish.
When I was a kid, we lived in Spain. My dad was assigned there. We has a Spanish maid who taught my mom how to cook some Spanish dishes. This was one what we grew up eating. It was and still is a treat.
This is almost exactly my experience. Dad was stationed there when I was in 3rd and 4th grade. It's inspired a lifelong love of Spanish foods and cooking.

This reminds me of a story my Mexican friend told us. He went to Spain and thought he knew Spanish, but a few words were not the same. He ordered five tortillas with his meal. Imagine his surprise when instead of five pieces of bread he got five omelets!

I know, old video with new comments the comments sometimes get lost. Wanted to say thanks for this recipe, it has now become the Saturday morning tradition in our house. I figured I would love it but the surprise is how much my wife looks forward to it on Saturday mornings. She even bought me a set of pans like you use in your video! Looking forward to cooking more of your recipes.
Thank you for posting this. I just made one for my friends last week and am cooking one now. It's for some volunteers in Ukraine, and since they love potatoes, I think they will love your recipe. I had never had a Spanish tortilla before this.
I grew up eating a French potato omelet (no onions), but when I visited Barcelona I made the switch to tortilla! Love the recipe and didn't even know there were pans specific to this purpose. Love it and thank you! Your recipe is spot on. The only change (in keeping with the ones I ate in Barcelona) is they slice the potatoes to about 1/4" (probably use a mandolin) and there are really cool looking stacked layers of potatoes. Could have been just the way they did it in that area. THANKS! Def getting the (cheaper) pan.
Superb, just discovered you and have subscribed. The little extra details really help a novice cool like myself, like showing the flame so we can see what you consider a low to medium meat is, the size of the pan and all these little details. I definitely want one of those pans! Thank you!
This is a great recipe, i have done this four times now and its getting better each time. I wonder how much better it would be with local spanish ingredients, amazing i bet. Your recipe for cod fritters is also fantastic!
I made a Torta Espanola today for a pot luck lunch before an outdor Shkespeare. It was good enough to eat. I did add a little Spanish smoked paprika. I served it cold. Thank you.
Thank you, did it in Guatemala (not a Chapin, but almost). For the first time good, now I understood the measures and process. Ready to dive further into Spanish cuisine.
I visited Cataluña this April, I tried tortilla for the first time and I loved it! It was an omelette but one of the best ones I've ever tried! Will be making this soon

I’m about to buy a pan with a flipping platter, and this recipe is perfect for that! my family from Greece makes something similar can’t wait to try it this way 😊
I followed this recipe and made my very first tortilla! And I must say, it turned out pretty great! I had to add 2 more eggs because I felt like the ratio of potato and onion to egg was a bit off (likely due to the size of my potatoes), but all good. Thanks for this video!
Last month, I was introduced to this dish in Madrid and loved it so much had it several more times on my first visit to Spain. I chose Russet Potatoes and decided a medium potato was 8 ounces. It was a little too much potatoes. I’m either going to reduce amount by 25% or add two eggs. In either case, very useful video and a very clean written recipe. Asked family members if they want to see it again. All said, “Yes.”
Thank you for this video. We lived in Spain for just over 4 years and I wish I would have paid more attention to the cooking styles. I've made a couple attempts at my own tortilla and it's getting better, but this technique should put me on the right track.

I think this video came out when I lived in Spain, so I didn't pay to much attention, (as I could buy them cheap at supermarket). Fast forward, back in USA, and I have to make them myself. I have the 24cm non stick pan and got a plate that fits inside the rim, making flipping easy. I think the hardest part is getting the egg to potato ratio right. Today's tortilla was a bit short on the egg, but still good. Haven't seen any recipes specifying in grams the egg to potato ratio. Seeing video helps to get the right ratio. Thx.
Love the way you explain it. A long time ago, I met an Española, visiting my country at Puerto Rico and she shared this recipe with me. She made it a bit different, the cutting of the potato. Instead cutting the potato in halves she cut it in round slices. And the way she mounted was in layers, with the egg batter and put it all in the oven, I guess. It looked as a cake. I feel that I’m gonna make it again. :) love your video!
THANK YOU! I love tortilla espanola. The ones I have made have been.....okay, but just not *right*.
