    This Lemon Sponge Cake is super light, sweet and moist. Infused with fresh lemons, it has a tangy lemon flavor.
    Lemon Sponge Cake
    Ingredients:
    2 large lemons
    4 eggs (medium size)
    100g sugar
    90g plain flour
    ½ tsp baking powder
    40ml corn oil
    70ml lemon juice
    1 tbsp lemon zest
    Baking Temperature: 150°C
    Baking Time : 60 minutes
    Round Baking Pan: 18cm in diameter
    Every oven works differently. Baking time may vary
    Tips: Gently insert a toothpick in the centre of the cake. If it comes out clean, the cake is ready.

    I tried this today and it went so good on the first try! I baked it on a normal round pan at 150C for 1 hour since I don’t have the tube pan and it still came out fluffy and the texture is almost melt-in-your-mouth! Would definitely save this recipe ❤️

    Looks beautiful but the lemon zest should have been more finely grated. Other than that, a very charming cake. I'm going to have a try.

    does anyone know what the baking time would be if I made this in a muffin tray? thanks
    edit: the answer is 11 minutes in the same temperature oven. also, use muffin liners (the little paper cup things) instead of greasing the muffin tray, that way the sides won't be brown. as for the water bath, just fill one of the spots on the muffin tray with warm water and fill the rest around it with batter. that way, there is still steam in the oven! :)

    I made this cake today and it was overwhelmingly lemony and oily however, I’m going to make it again replacing the oil with butter and using just one lemon. I also had to turn down oven temperature to 140* for fan assisted. Will let you know results when I have baked it.

      Catherine , when you said overwhelmingly lemony and oily, I was very surprised by your remarks. You may have measure the ml /ingredients incorrectly. I baked this cake many times and it always turns out good with no trace of oilyness. This cake is actually a very light cake. Your comments are unbelievable.

      I weighed and measured everything to gram/ ml and the only thing I can think of is the tin. I used an aluminium 18cm but it was not an easy release. Your tin looked bigger but you say not. I’ve ordered a tin and will try this again as it’s an easy recipe and I like lemon, just not overpowering. My cake looks nothing like yours and it started to burn on top, which I put down to my oven, fan assisted, but that wouldn’t alter the taste. So I’ll make another with your recipe in new tin and then I’ll make another using butter and one large lemon. I’ll let you know results of both. Thanks for reply.

      @@catherinedavid3662 the exact same thing happened to me. I followed the recipe too. It was edible but i dont like the oily taste in the cake. I prefer butter in cakes. You should try a recipe for lemon drizzle cake. Much nicer texture to it. ❤

      I make my own version of lemon cake and never had a problem and I use butter and one lemon. My cakes turn out like cake, but I have noticed that a lot of other countries use oil to make their cakes spongy like an extra thick pancake, that’s the only way I can describe them. I do like the spongy cake and I’ve done a few of Michael Lims but never had a problem copying his recipes. Anyway I’ll try this recipe again with a few tweaks and let you know. 🇬🇧

    We usually don't get lemon here...can we use lime .If so how much of lime can we substitute coresspondinly.
    Think lime is stronger in flavour...don't know

    I have made this cake so many times and it always works for me. I am doing it again today, but my cake seems to be very bubbly on top. Is there a reason why? Will it fix itself when it is done in the oven?

      Hi maya, perhaps you could let it bake for another 2-3 minutes more so that the top is firm before bringing the cake out.

    Couple questions: what can I substitute Corn oil? Olive oil have taste so maybe something different?
    And what exactly water bath do?
    In my opinion in doesn't let top to brown.

      Hi there, you can use any vegetable oil such as sunflower oil. Olive oil is not a good idea as it has a strong flavour. Waterbath method adds moist to the oven and helps to even out the temperature. It reduces cracks. The cake will turns out soft and moist.

    Thanks for your vid! I'll make it! So good! I went to my local cake shop in where they say that they will make any cake! When I ask for a simple Lemon cake all they had was a pre fabricated one! For £5! Then we are told support your local store! I rather not.

      Hi, first of all waterbath method adds moisture to the oven and helps to even out the temperature. It reduces crack. The cake usually turns out soft and moist. As for oven, Its fine to use oven just make sure your oven temperature is correct. I would suggest to have a oven thermometer to be sure you have the correct temperature.

      Hi Blenderis, squeeze the juice out from the 2 large lemons. Then measure 70ml from there. You need only 70ml lemon juice. Success to you.

      Hi Lynette, if you want to make lemon cupcakes, you can go to my other muffins recipe . Just replace the milk with lemon juice. Then you dont need water bath. Follow the muffins recipe. Success

      how did it go? need to make 7 layered cakes for a customer this weekennd and lemon was requested but dont have a light recipe which will stack and stay light whilst stacked for a few days, also i freeze all my cakes pre stacking, did you do that with this recipe

      Elfie Willow i usually stop at 5 layered otherwise it tips. I’d use a dowel and a cake board in the middle for a 7 layer

    I did the cake today and unfortunately it didn’t rise. I don’t know my mistake.
    I did preheated the oven before I baked it?! Is this related

      Hi Nano, I am sorry to hear that your cake did not rise. There are many reasons why sometimes cakes did not rise. 1) make sure the baking powder is not expired. 2) The folding part is crucial because if you overfold the batter, you will deflate the batter and the cake will not rise well. Gently fold the bottom to the top (do not stir). This is to incorporate air in the mixture and your cake will rise well. 3) Never open the oven door while baking. I always preheat my oven before baking but just make sure the temperature is set on the recipe called for. To be sure, get a oven thermometer because sometimes the oven temperature is different from the oven thermometer.

    Hi,may i know is that u only zest 1 of the lemons & didn't use all the juice from 2 lemons ? As usually 2 lemons produce 2tbsp zest & 120ml juice.

      Hi Ivy, here is the recipe, 1 tablespoon lemon zest from 1 large lemon and measure 70ml lemon juice from 2 large lemons.

      Hi edi, you can try. If you use spelt flour, you may need to adjust the recipe such as the measurement of the lemon juice, reducing the amount of liquid by 1/4 because spelt flour is more water soluble than plain flour. You can look it up on google over the measurement.

    Great recipe. Made it today and everyone who tasted it said it was "amazing", and need to bring the cake to more gatherings. Taste wise, it was on point.
    However, the cake came away from the side (sunk in a bit) and was quite brown unlike yours that was pale. Why could that be?

      Hi Isaac, thanks for trying out the recipe. You said that the side a bit brown and came off, did you overbaked the cake? Perhaps first you may like to check your oven temperature using a oven thermometer. Every oven is different and baking time may vary. Secondly I hope you bake with waterbath.

      Thank you for replying! I set my oven to 160, and also used the waterbath. However, I put in boiling water instead of cold, could that have made the difference?
      Regardless of the cause, the cake was still amazing and I will keep trying until I get it perfect lol.
