    For those who likes chiffon cake and has no tube pan/angel food pan, this is might be the recipe for you. It has a soft and spongy texture like chiffon cake. Wish you success for making this cake.
    Lemon Sponge Cake
    4 Large Egg Whites (120 grams)
    1 teaspoon Vinegar
    120 grams Fine Sugar
    4 Large Egg Yolks (72 grams)
    120 grams Plain Flour
    1/2 teaspoon Salt
    30 grams Oil (30 ml.)
    40 grams Fresh Lemon Juice (40 ml.)
    1 tablespoon Lemon Zest
    Pan Size: 18 cm
    Oven Temperature: 150°C for 35 minutes, 170°C for 3 minutes

    I love the fact that you use a basic hand held mixer to prepare your ingredients and that you don't have to resort to using hellishly expensive equipment to get it done and done perfectly. Thank you for the advice and tips.

    This recipe is definitely foolproof if you follow all the steps. I actually added a few drops of vanilla and almond extract and wow it was perfect for our taste 😍🙏🏼 definitely going to make this again!!!

    Found this recipe after I kept messing up my lemon pound cake. Although sponge and ooh d cakes are different, I really don't regret using this recipe. Thanks for being there for me in times of emergency, now I am using this on a regular basis!
    Anyone tried adding chia seeds into the batter tho?

    I have to be honest, i was skeptical in doing this recipe, just because it looked to me as if it was going to be a bit hard on the top, like not a super soft sponge, but I just done and Oh My God! It is amazing! Taste, texture, flufiness and you made it to easy to follow it up as well as the ingredients are very cheap, few and mostly with things that most people have at home. Thank you so much, definitely will be making more again and I can't wait to give some to my landlord who's coming to visit tomorrow!

    WOW i just made this and it turned out very very delicious. although i did add 1/2 teaspoon vanilla extract and instead of 1 tablespoon Lemon Zest i added only 1/2 table spoon Lemon Zest

    Mr. Lim u r d best ! I hv tried this cake recipe n it turned out just great. Only thing i think the vinegar is quite a lot in portion, if i could lessen it to a 1/2 teaspoon than it could taste better. Right now it taste a strong flavour of white vinegar taste. Otherwise, just perfect !

    Can I mix the egg yolk, oil, "lemon and flour separately and fold into the meringue?

    I noticed you decided to use the hand whisk over the power hand mixer after you made the egg white sugar mixture and before the egg yolks were added. What are you trying to avoid when you use the hand whisk? I myself would have continued on using the power mixer until I was ready to pour the batter into the spring form pan. I must be missing something here.

      @@larkis4821 I didn't add vinegar and it still had a nice lemon flavour. It wasn't really sour but tasted like lemon y'know? Also the cake is extremely soft and fluffy so I definitely recommend this recipe!!!!

      i would say double the recipe. he uses one 7" pan.

      Honestly, it is totally worth it to get a food scale for baking. You’ll get much more consistent results!

    The best lemon sponge cake I have ever made - moist, tasty, soft, spongy yet dense and tender. Thank you for sharing your recipe, Michael. My children enjoy all the cakes I made following your recipes! They keep asking me to bake cake for their school snack!! BTW, I do not use sugar for my cooking or baking. I use soluble fiber such as Vitafiber or Swerve. They are better alternative than sugar for our health!

      Double the recipe for pan size 24 and 26 cm.

      No need to grease the side because we want the cake to rise and hold on to the side.
