Both the 1922 and 1979 versions are worth checking out, but if you can only watch one, then I recommend the one that started it all. Fun fact: Wilem Defoe played Max Shreck as a vampire in Shadow of the Vampire, a very fictionalised account of the making of Nosferatu.

The title "Shadow of the Vampire" sounds vaguely familiar. I may have seen it at some point, and that's why subliminally I could picture him in that role. Thank you for the information.
