I did the shallots as you describe and they paste was awesome! Also, I kept the oil (peanut oil) which I use as a finishing oil on many dishes. Do you think this would work with leeks? Galangal? Lemongrass? (for thai and malay cooking) We often use ginger and/or garlic pastes (shan) and there is a really good garlic mince with no citric acids. Works just like chopping and mincing and almost as tasty. Do you think the shallots could be just minced instead of pureed? Would it store ok? Thank you again for showing us how to do this with shallots.
As shallots belong to the family of garlic so it can be used in any thing along with the garlic, inter alia, where garlic in used. In wazwaan it us used to engance the taste of the diahes. As a paste it can be stored for year in a freezer.

That doesn't matter. When it becomes fine paste then we have to add boiling hot oil or ghee n repeat the process it itself turns white, as shown in the video You might have over fried the shallots, or actually burnt them.
