    I love how humble you are, you didn't boast about your flour not once. Rather you showed us WHY this flour will help us. Thank you for the education too, I learned so much. You gave evidence of why you're saying what you're saying. I know that with a zero total carb flour there's no way we wont lose weight. You're amazing!

    I used your CK (chicken) flour to make fried fish! Spectacular!! Process: Seasoned fish, dredged in Bamboo Fiber, then beaten egg with a little water, and finally dredged in your CK Flour. Let sit on a baking rack for 15 mins and then fried in Avocado oil using a cast iron skillet. Hubby said if I had not told him, he would have believed it was fried in seasoned white flour. Delicious!

    Mel you are a genius!! I just mixed my first batch of your almond flour. I then used the flour to make your bun/ bread recipe . This is the first time in 5 years that a bread product actually tastes like, feels like and stays together like a bread product!!!! I am so in love!
    I am in America and was using a recipe that an American lady made. I was disappointed in how her recipe turned out. So I started searching TH-cam and found you. I am so happy I did. I see lots of baking in my future now. Thank you!!

      Try her pizza crust with the “Tangzong “ starter. Terrific. I was a bit hesitant about making the starter, but it was really easy. I use the almond flour.
      It was on a live.

    I’m now convinced to make chicken flour and yeah bamboo fibre is amazing addition to keto recipes. I couldn’t stand taste of oat fibre anymore and definitely can’t detect any taste from bamboo fibre.

    Take it from me: please save yourself the aggravation and simply purchase your egg white powder. Don't try to make it yourself unless you get your eggs for free and you have loads of patience and plenty of time. I yielded only 8oz of egg white powder from 5 dozen egg whites after dehydrating the messy liquid in my Excalibur. Gigantic pain in the butt process which took many hours of clean up AND turned out more expensive than buying the ready made egg white powder (which costs a fortune in Canada). I ended up paying 3.25/oz of powder and you can buy ready made for just over 2$/oz (in Canada).

    But You did NOT disappoint!! Along with that gingham apron!!
    Another vintage flash back!! I made light blue gingham curtains for my 1st kitchen back in 1973!!
    I just need make my own meat flour & I am in business!!
    I have been making a version of Courtney Luna's meat bread & it is very good!
    Nice that I just get to use the meat... but I'm sure the meat flour can be made in large batches also.
    You ROCK Mel!! I Love waffles & can't wait to try that!!
    Though I leave mine in the iron until they are crisp!

    I am a canner and have a lot of canned chicken breast. I put the chicken breast in my food processor then in the dehydrator back into a spice grinder turned out great thanks for the idea. God bless

    I have a friend who literally tested positive for every single food-including chicken and beef. I encouraged her to try beef that is grass FINISHED in case her reaction to beef was because the cow was fed corn -which is highly allergic to many people-for many different reasons.

      I cannot eat mass-produced eggs because I get an inflammatory reaction, but pasture-raised eggs are fine. I am sensitive to grains and soybeans, which I presume the chickens are fed, and the protein I react to must be passed into the eggs.

      Chicken, eggs, corn, soy, tomato allergies are unfortunately common. I've met many people allergic to one or more of these.

    Thanks Mel sure am glad that you are posting on TH-cam and I joined your Patreon😊 channel I love to bake and make my husband homemade bread every other week and now I can make mine with out carbs or very little. I go for my A1C in 2 weeks I had been 6.9 for the last 3 years not on any meds for it. December was down 6.4 and with my sensors I think I am 6.0 or less time will tell. God bless

      @@CookwithMel1I made the 90 second tortillas recipe without the chicken flour, but mixed in a tablespoon each of blue cheese and brewers yeast. It turned out slightly crispy and very tasty.

    Hey Mel! You're using the words bamboo fiber and bamboo flour interchangeable but I just watched a video from a channel called Bamboo Batu and he said the two are not interchangeable. The flour is made from the shoots of bamboo and the fiber is made from the whole plant. Anyway, the product you linked is for the fiber so I just wanted to be sure that's what you meant and to also let other people know there's a difference 😉. Blessings!

    I love this! It’s so easy to make your own chicken flour. Boil some chicken breasts, then stick them in a dehydrator @150 degrees Fahrenheit for about 6 to 7 hours. Grind the pieces in a coffee grinder or high power blender.

      Set the oven temp to 320f/160c and line a baking sheet.
      Drain the water from the chicken as best you can, then spread the chicken evenly across the baking sheet. Let it bake for 20 minutes and stir so that the underside can also dehydrate. Please repeat after another 20 minutes. The chicken is ready when it's hard and dry.
      The go ahead with grinding and bake one more time to ensure it's dry. Grind again and sift.

    Hi Mel, I made chicken flour for the first time today. 1.5kg of chicken breast yielded just 240g of flour - yikes! It's a lot of work for such a tiny amount. I then made a wrap in the microwave and it tasted strongly of chicken, and I while I ground the flour and sifted it into a fine powder, I could easily detect the chicken fibres too. Is this true for you too? I adore you and appreciate all your incredible experiments and creations, so thank you! I just wish I liked this more, because the idea behind it and the macros are amazing! 😊

      Hi Tex..well done. For me 2.2kg of chicken is enough. If you find the chicken overpowering you can add almond flour to the flour. I've tried half and half and it's really good. By the way which wrap recipe did you use please? Sometimes I do detect chicken fibers, I've had that happen twice. I'm working on yeasted recipes at the moment and amazingly...no fibers. Have you considered using the CK Bread Recipe to make wraps but do half almond and half chicken...I think you will like it better. Thanks so much Tex...appreciate it 😊😊😊

    Excellent recipe for a baking flour. Seems like the breads will be moist and “chewy” as well. I’ll definitely mix it up. I wanted to ask you what your thoughts on what a great keto frying flour is? One that won’t burn so fast like the nut flours and the protein powders. I just can’t find one that has a low burning point. Maybe it’s just best to boil the meats first, then bread and fry? Thank you Ma’am and thanks for sharing your very well researched recipes!

    If substituting Lupine or Almond Flour for the Chicken flour would I still use 3 cups of it? I understand to add a few extra Tablespoons of water with the Lupine.❤❤❤

      To create the same amount of weight in the dry ingredients I would use the same amount and yeah you're right you would increase the water amount in the recipes. Please let me know of a recipe you would like to try because I will try it with CK Lupin first. 😘😘😘

    This is great flour. I made a pretty decent pizza crust with the flour, baking powder, salt, coconut oil, yogurt and a couple spoonfuls of flaxseed meal mixed with water. I only added enough yogurt and flaxmeal to get a consistency similar to play dough. It pressed out well by hand and the crust doesn't crumble or fold. However - do add some garlic and onion powder to the dough. I thought I would let you work out a good recipe since you developed the flour.

    Hello, again Mel. Sorry I'm, so dumb. What ratios is your clean ekto flour with chicken and Almond flour and can something else replace the Almond flour for low oxalate. I'm closer to carnivore than keto per se.
    Also, can I sub Oat fibre or vital wheat gluten for bamboo fibre? Or psyllium husk. Do I just use it 1:1 when made. Sorry for all the questions.

      It's quite alright...the chicken/almond flour ingredient is the variable. You can use Pecan or some other non oxalate flour...you will need 360g if it's used as a regular flour for keto. You can use oat fiber instead of bamboo fiber, same amount. The VWG is a rather different ingredient. 😊😊😊

    I made a double batch of CK (almond flour) Keto Flour this afternoon. Waiting on UPS to deliver my Pullman pan. Tomorrow morning early (before my first “live”) I plan to make a loaf of bread. Forecast to be 105° real temp here in central Texas. Ovens are not used often. 🤦‍♀️🤦‍♀️😂

I bought two big bags, but when I opened and smelled the powder I just couldn't use it and ended up throwing it away. I'm sorry I don't have a single recipe using it. I've only ever heard of it being used in Protein Sparing Bread like in the recipe below.

    I made the chicken flour. Weighed all ingredients in grams. The single large cookie recipe was dry and very dense. I will bake less next time. But it was still very dry as well. 🤔wonder if the bamboo fiber needed more liquid and that was part of the problem. Anyone else had a similar result?

      I have noticed that we need to lower the temperature by about 15 to 20 degrees and keep an eye on it towards the end as it needs a little less time to bake.

    This sounds great. I make my own chicken flour from chicken breasts I buy on sale, simmer until cooked, chop in the food processor, dry in a 170F oven until crunchy, and grind in an Indian spice mill. (a blender will do) I can't use commercial eggs because I react to them, but I can dehydrate my own egg whites. Just started a dozen, wonder what I'm going to do with all those yolks...

      @@CookwithMel1 I found your recipe to be a bit more meaty in texture and drier than I would like for my bread-like substance. Here's what I did.
      All ingredients should be at room temperature.
      4 eggs
      4 oz cream cheese
      4 tablespoon butter
      1 tablespoon yeast
      1 tsp inulin (to feed the yeast)
      1 tsp baking powder
      1/2 cup flour blend
      1/2 tsp salt
      Mash together the cream cheese and butter. Give it a few seconds in the microwave if it is still too firm to mix smoothly. Beat together with the eggs. Mix the inulin and yeast together. Mix in with the eggs and allow to rest at room temperature for about 15 minutes. Now add flour, salt, and baking powder. Pour into a greased bread pan. Allow to rise in a warm place until it has doubled in height. I put mine in my dehydrator at 115F. Bake at 340F for 50 minutes. This recipe makes enough batter to make a small pullman loaf. Just multiply or divide to make a muffin or fill a larger loaf pan.
      I have made this with both pork and chicken flour. Coming up: Shrimp garlic toast made with powdered shrimp.

      @@CookwithMel1 Breads made with eggs rather than water do tend to be a little moist in the middle. I slice them and store them in the freezer. Next I will use beef flour mix and caraway to make "caraway rye".

    I’m allergic to chicken. I have made beef flour so now looking for a good carnivore pastry recipe, minimal ingredients excluding xanthum gum, egg white powder etc as am sensitive to them also.

      Oh, sorry to hear Sandra. Okay if you're allergic to egg white protein then it means my flour recipe won't work for you 😭😭😭

    I made bread using the chicken version of your flour. My husband and i couldnt even eat it. It was awful lol. The chicken flavor was so doninant, and it was dry as a (chicken ) bone. Your cottage cheese rolls, however, was amazing!

      Oh...sorry to hear that. Maybe the chicken flour version isn't for you. People love it because it's zero carb. The almond flour blend is also zero Net carbs but it will have a higher total carb amount. I love that there is a choice and I hope you give it a try with the almond. It's much more easier in most aspects 😊

      @@CookwithMel1 Maybe some people need to use more butter? I use coconut flour and the big thing with that one is how much fat (butter?) and water you need. Maybe anything made with this flour needs (per cup) an extra say tablespoon or 2 of water or butter.

    Can I substitute: psyllium husk for bamboo fiber; and use almond flour in place of both: chicken flour and white egg protein powder? Just want to make this recepie more affordable and simple.

      Hello...I haven't tried substituting the bamboo fiber with psyllium husk because I feel like that would've turned all baking to a brown color. You can use almond flour instead of chicken flour...lots of us do. However not so for the egg white protein powder. I think the only alternative that may work is meringue powder. If you imagine what happens in baking....almond flour is just ground almonds but eggs in baking help the baked goods to fluff up and rise.

      I bake it at 150F and mix it and redistribute after 10 minutes...then bake again for another 10. It should be nice and dry 😊

      You can use oat fiber but a warning...it has a bitter taste to it compared to the bamboo. You are 100% correct about the chicken flour. The process minimises the chicken flavor but also the bamboo fiber then further reduces the flavor. It has a slight chicken flavor and it's delicious in breads, tortillas and such ❤️

    Hey Mel, I wonder if you could take that flour mix and add in a whole egg some vanilla extract, and maybe some heavy cream to make a tasty pancake? it seems since going full-on carnivore the only 2 things I miss are a good pancake and something I can use for a breakfast sandwich like a biscuit or English muffin.

      @@CookwithMel1 It's truly interesting how our palates can be so varied, though I believe much has to do w/the other ingredients involved as well. For instance, using something like pumpkin or chocolate provides a more dominant base, as they are such strong flavors. In my own experience, I've been unable to detect coconut flour or chicken flour when used w/pumpkin or chocolate. *I actually made a chocolate cake & donuts recently that had a ground beef base- no flour of any kind- & could not taste any beef at all, which shocked me! Food chemistry is fascinating, & I adore channels that are brave enough to work w/unconventional ingredients ~ AND share the process along the way!
      Such a brilliant concept for content because it's really, REALLY helpful to so many out here who may have time/space/energy constraints~ or simply don't care for the experimentation end of it. I happen to love it, but am now fulltime in a tiny RV, so I get to live vicariously through your kitchen & recipe testing~ plus get right to it w/a final product, woo hoo!🎈

      Hello whey protein just isn't the same. I'm working on a solution.oat fiber can be used instead of bamboo. Instead of chicken flour you can use beef or pork

      Hello Elena. You would use 360g of any nut or meat flour. Some are more absorbant than others, Coconut Flour is chicken flour is more so than almond. So when we use those in a recipe we just add more water.

      Hi Michael. So the flour is the 1st video with the CK Flour. Everyone after that is a recipe using CK Flour, just have a look at the latest videos. I find it's a 1:1 replacement for alot of recipes. If using all CK Chicken Flour one does need to taste the batter before baking. If it tastes like chicken to you then you could add an extract or flavoring.
