Is using the Sakk over something like a Peak Design crossbody bag really that much better? I've always used my bags to stabilize cameras in this way but have always done it with bags I can also put the camera and additional gear in as well so I've never quite understood the Sakk and similar products, especially at the price premium.

Honestly no. It feels like a solid product. My guess is they just saw there’s no other competitor and can make the same thing at a cheaper price point. Good business move.
these have been around for firearms for a long time, theyre called bag rests in that context, pretty cool to see it used for cameras too

Could it be possible to change the straps for a peak design strap? I think that way you could adjust the height pretty quickly.

Bought one and returned it. Too loud and too expensive for what it is. I'll just use my old laptop bag, seems to work better, honestly.
could you not switch the straps to easy adjust ones on amazon and fix the issue you mention?
