I'm loving the mini meal preps! This fits in perfectly with my work schedule. I like to cook my meal prep the day before my three days of 12 hour shifts. I do not cook after working all day. I might start a crockpot in the morning but that's it. I have been doing mini meal preps for awhile now so I'm always looking for inspiration. Please post more mini meal preps.
"Meal prep is what you want it to be." -- I like this takeaway. 💚 I've recently been interested in meal prep because I wanted the family to have healthier/cheaper meals instead of rotating around 10 recipes only and eventually doing takeouts. I'm thankful I have the downtime right now to prep every single day so the food is served freshly cooked, but I'm starting to realize that it is not ideal especially if I do become busy with work again. Meal prepping a week's worth of meals for 6 people in packed lunch style is something I'm still trying to figure out, but out of all the meal prepping vids that topped in my search, your aesthetics and tips caught my eye. Looking forward to your future vid releases whatever topics you decide. And will of course keep posted on your newsletter.

I've been reading up and watching videos to help me become more efficient in the kitchen and I stumbled upon your videos and thought why not learn more about meal prep whilst I'm on vacation. I guess I was just wondering if you could show us your process of meal prepping for families. Like what tools you use, how do you keep the meals interesting. How about when you have several people in the household with dietary restrictions? I know these questions might be all too much, however this could really make for a good video discussion in the future
What a surprise! À video a day in advance!! Love your mini meal prep. I started doing that, not every week but when I find some time on the weekend. Life with a toddler and a baby is chaotic around dinner time so it’s always helpful to have some meals ready! Happy thanksgiving Erica!
Looks so yummy! I’ve started stabilizing my cutting board with a wet paper towel because of you. Game changer. 🤯 Who knew your board shouldn’t slide around? 😅🙈

So once you finish these big portions do you immediately place/portion them in the days’ specific containers or keep them in large pyrex containers till you wanna eat?
Loving all the content lately! I'm wondering how you deal with food waste? my worry with meal prepping is that things will go bad before I get to them and I hate throwing things out!
I’m so happy, Amy!! So I’ve been trying to figure out how to talk about this in a more holistic way! Because I really don’t waste much food at all, but that’s come with years of practice with menu planning and meal prep remixing! I talk about remixing meal preps in my “what I eat in a week” video and that’s honestly my biggest Rec!
When I make dips like that I always use the exact same yogurt but I just dump the seasoning straight into the yogurt container and combine!! One less bowl to wash lol
I moved into a new apartment and the owners had left some of the onion dip mix in the cabinet. I was going to throw it out but will try with yogurt now :)

My question is, how important do you think brand/quality is when purchasing dry beans? Are generic brands okay or is it worth it to opt for a slightly more spendy brand? Thanks!
Generic brands are generally just as good as a name brand. Very often they’re actually made in the same factory, but packaged in a different box. That means that you’re paying for the brand instead of a superior product.
:):) so glad, katie! So I mostly agree with above, that said, what does really matter with homemade beans is that they’re not old! When you buy from a quality brand, you’re usually ensuring they haven’t been hanging out on the shelves for YEARS which really degrades quality. I’m using about 1.5 cups (before soaking) rancho Gordo beans here (some sort of pretty standard brown bean-they have a lot of varieties) - they were gifted but I’d definitely buy them again myself!

Another amazing thing to add to Greek yogurt…. Trader Joe’s has a green goddess seasoning mix (find it with the spices). HIGHLY RECOMMEND!

I make these beans in pressure cooker in 20 minutes 😂,
I've actually never tried in a pressure cooker, but like mentioned in the video, these are almost completely hands off while they're cooking :)
