    Like other olive oil cakes, this one stays fresh for days.
    It's an old Greek recipe, measured in yogurt jars, of 250 grams.
    In old Greek recipes, this type of measuring, using yogurt jars, was quite common. Some recipes are still preserved in this way.
    💚OLIVE OIL LEMON CAKE RECIPE:
    250 g greek yogurt 10%
    1 cup olive oil
    2 cups brown sugar
    2,5 cups all-purpose flour
    1/2 a cup almond flakes
    3 eggs
    2 tsp baking powder
    1/4 a tsp baking soda
    1 vanilla powder
    1 tsp mahlab
    zest of half a small lemon
    💚INSTRUCTIONS:
    Break 3 eggs and separate whit from yolks
    Beet whites with a pinch of salt till stiff
    Combine the egg yolks and sugar with a hand mixer until creamy, reaching a white-creamy color and ensuring the sugar is completely dissolved
    Add olive oil and mix a few seconds to combine
    Next, add the zest, almond fakes, baking powder, baking soda, vanilla, and mahlab, gently combining them with a wooden spoon until fully incorporated.
    Add greek yogurt bit by bit and gently combining with a wooden spoon until fully incorporated.
    Alternate adding the flour and beaten egg whites into the mixture, gently stirring after each addition until just combined
    Be careful not to overmix, as it can disrupt the structure of the beaten egg whites, affecting the cake's rise. Aim to gently incorporate the ingredients with a few gentle motions , just until combined
    Line a 25 cm (10 inches) round baking tray with parchment paper and evenly spread the dough across the tray
    Bake for 45 minutes at 355 F/ 180 C in the middle section of the oven
    Cool down completely and sprinkle with some powdered sugar and lemon zest
    Will keep fresh when stored in air-tight container for up to a week
    Amazing for a school or work sweet yet wholesome snack when you want to satisfy that sweet craving but want to have full control over what ingredients you consume!
    Stored in an airtight container retains its freshness for up to 1 week.
