- Visiting Ichimatsu Yakitori (One Star Michelin) in Osaka to try different types of grilled chicken and have some Sake. The Michelin Guide writes: Hideto Takeda is so enthusiastic about Hinai chicken that he travels back and forth to Akita. The chicken’s charm is in its smooth texture and light fat. Breast meat comes with soy sauce and wasabi, and chicken meatballs are placed on rough-hewn spicebush skewers and grilled. But it goes beyond just yakitori, with pâté, dry-cured ham, soup and numerous other accompaniments. His respect for the producers is evident in the set menu, which speaks of his fascination with chicken.

$82.50 per person for this level of yakitori omakase is absolutely absurd. you'd easily pay 2x-3x for the same over in NYC at the few yakitori omakase's that they have to offer.

Exactly! Def great food but yea, I guess yakitori, oden, etc. all these street food are moving towards omakase these days. I live close to SF and almost all new sushi restaurants serve omakase. Omakase, at least to me, means chef choice of the day, and usually means what's the freshest for the day/season, now more means if you set meal includes sake, sake belly, toro, chu toro, and maybe aji...
With $1=140 yen, almost 90 dollar per person is quite a lot for yakitori. Guess my next mission to Japan will be bargain/local food hunting!

michelin starred but there are still feathers left on the chicken when served? i guess meat eating comes with it's travails, but as a prole who has never been in such a joint i would've thought that any place this fancy would be meticulous about cleaning the chicken

That’s a lot of money for some chicken. Chicken is the same. Not like there is some mythical cut of chicken that is prized. So why so much for a few skewers? So glad I can cook this dish at home flawlessly for under $20.00 US😂
The chicken is a specific breed of chicken called hinai jidori, which has very high standards and requirements to be classified. Its basically the chicken version of Kobe beef. You're also paying for the experience. The place has a michelin star for a reason lol

@@DJXcaliburDon't you know? Everything in Japan has higher standards, and every dish is cooked with a mythical breed of the animal chosen. The chefs honor, and dignity is based off of this, because they're a mystical and artful society. Anything less than the perfection noted in all of these comments would make the chef commit suicide. Thus, you pay almost $200 for a few bites of chicken, some of it raw, while you surely couldn't get the same meal for $10 from a street vendor
@@poultrygeist8253 trust me when I say the street vendor probably has a way better tasting meal! Also probably much cheaper! Chicken is chicken! Give it a different name based on how it is raised or where it lives. Regardless, they all taste the same…. like chicken!🙄😒
