I've seen this Chef "perform" on numerous occasions, never ceases to amaze, he frequently tosses the whole egg with the spatula and catches it in his chef's hat.
I like Korean food and love to cook. I usually work up a good appetite playing drums. A flat grill added to the drumset will be perfect 🥢😋

Last time I went for teppanyaki, the chef was passing a bowl of rice to me with his spatula, only right as I was about to grab it, he flipped it backwards and caught it again on the spatula. I got played hard, and I also think that may have given me trust issues.

I see it as pointless also, though its for the wow effect. I can see the art of not only having the pressure of cooking and building a beautiful plate while also entertaining the customer that's right in front row. All while making it look effortless. Not for me though can sort of respect it.

You eat as he cooks, they serve up fresh dishes as they go
For the video, they are not eating as the food is served, so you can see it all on the plate. Normally that's what you do, you eat each item as it is put on the plate, so nothing would get cold. If the chef put an item on the plate, and you did not eat it, he would be offended.
