Such a fun evening. Appreciate your perspective on the historic places and honoring the history of bbq in general. As someone who has grown up in kc but is pretty new to making bbq I’ve kind of taken that for granted. This was a great reminder.
Loved you showing the history and why you chose the places y'all did. Bbq is different depending on where you're from, but in the end, it's all meat, smoke, and maybe a sauce. Also love seeing you, Jeremy and Brad team up so much. You all bring something different to us as viewers but mesh so well together.

I think sometimes people get a little caught up in specific styles and make it all or nothing. Maybe it’s because I live in a region without it’s own BBQ style, but the variety of styles is partly what makes BBQ great to me. I think it’s OK to like NC style pork the best, and Texas for brisket, and KC for ribs, etc. And it’s nice to switch up styles once in a while to keep things fresh.

I was in KC for a few weeks about 18 years ago and did the same kinda thing you did here. I am from Texas, and have been cooking and eating BBQ forever. When I got the thin sliced brisket sandwich at Arthur Bryant's, I was blown away, and that is rare. I liked it so much that I bought a 4k dollar slicer so I could do it myself, because I've never seen it here in Texas.
Great video! Arthur Bryant's is on my bucket list. I'm a displaced Texas native living in Southern California. I just so happened to received a smoked brisket in the mail yesterday from Angelo's barbecue in Fort Worth that I am shoveling into my mouth.
Grew up about 2.5 hrs north and Q39, Joe's, and JackStacks are the ones to hit. As much as I love each them (Gates too, but they're not as good), you're 100% correct.
My first ever BBQ in Kansas City was at Arthur Bryant's. I picked it because it was the first BBQ. The ribs were amazing and I loved that the sauce was not sweet. I have developed my own sauce based on the flavors of it. I did not think that it was tomato heavy at all. It is mostly vinegar and paprika.
@@knoxavebbq I sort of cheated. I started from the ingredient list on the back one one of the bottles. The mustard flour confused me for a bit until I realized it was just a fancy name for yellow mustard powder. I tweaked it until I had a flavor profile that I liked.
@ the 6:45 mark the menu says brisket for 20.49 lb. That`s a great price. I`d have to get some at those prices. All the brisket in my great state of Texas is over 30 bucks and you have to wait in line for it (I don`t and never will). Keep up the good work Jo.
Lifetime Kansas City resident here: I really like how you came to town to give it all a try, and I agree, our restaurants are fine but they've been such a staple for so long that they're really nothing to write home about (though there are a few I will defend until the day I die!). But, and this is where you may have missed out, the best BBQ in Kansas City is 100% the backyard and competition folks. There isn't a weekend (or weeknight, really) that goes by without someone in my neighborhood smoking something amazing. A lot of us here make our own sauces and rubs as well and hold on to our 'secret' recipes as if they were the next milliion dollar idea, and I think some of them really could be. I recommend coming to the American Royal competition or the Lenexa BBQ competition and finding the blue collar KC folks that will definitely be there competing. You won't regret it.
I travel for work alot, KC,OKC, Dallas, Houston, Austin,Atlanta, and Carolinas. So, I've tried BBQ from all over. In KC, Jack Stacks and Q39 are my faves. Char is good too.

I like these videos. Being a fellow Chicagoan, our BBQ is weak compared to the rest of the country. I'd say Chicago style BBQ is mostly rib tips and hot links (with some chain rib joints that started in the 70's like the Patio mixed in). Seeing BBQ in other regions of the country is pretty cool. Loved this episode, it felt like I was right there with you! Ive always been into bbq’ing, but more serious for the past few years. In terms of bbq history I’m a novice and this was super informative. Being from California, Im more inclined now, to research cali bbq history after watching this. i've had barbeque from all over the country, except the lowcountry whole hog. which i look forward to. as long as it is done well i have Zero complaints. Good BBQ is good.
Kansas City is the Chinese buffet of BBQ. Nothing in particular stands out, but there's that one OK thing you keep going back for and everything is covered in some kind of sauce that makes the otherwise bland food better.
@Joe Yim my recent adventures...don't laugh, but I have been smoking meats for years, but I did not like fat. We visited Hurtados BBQ in Ft. Worth, and I tasted the brisket with the fat. I have been missing out! I also smoked beef cheeks.
I travel alot for work and i get to try alot of bbq, theres not alot of places that are great out there in the middle of no where or if they dont have a scene for it. Its alot of time and effort done for a product that apparently people are ok with crockpot and sauce. Ill be in kc in august and definitely will be doing a run of some of the places. At the end of the day its still cooked meat so thats good
I’ve been to KC twice for a national plumbing completion in high school of all things (won both times 💪🏻) definitely remember hitting up Gates in Downton KC, seemed like the OG location when I went at the time (2013/14) and the burn ends were insaneeeee! I'm with you Joe. I'm from Santa Maria, CA where people are die-hard about Santa Maria style bbq but that doesn't mean that you should limit yourself to just one style. The real ones know what's up.
Good stuff as usual, Joe. I like to say every culture has bbq and what’s most important is cooking meat over fire outside with friends. No bbq is better than others, it’s all unique experiences. Can’t go wrong with meat over fire.

I thought it was especially cool that you were able to both highlight some of the OG places, but review the new generation places on a higher standard. I do remember my one experience in KC a long time ago as being too saucy, but with the new spots it seems like there is definitely a lot more balance in what they do. Do you guys plan to do a similar series for St Louis, Memphis, or Carolina's styles? Oh yeah, not sure if you know Alex the cooking guy''s video. He did a collab with Ramen Lord during his ramen series, and he seemed blown away by a bite of brisket he tried. Would be dope if you did a collab with him on a TX BBQ series with your background!
No plans to do a trip like this again. I was at the ramen event. Haha. I wish I could call up anyone to do collabs. Unfortunately it doesn’t work like that.
You should go back to Arthur Bryant's when they have ribs. When I went, the ribs and pulled pork were my favorites. As good as anything I've ever had (including Texas!)
I should mention that my wife and I went right when they opened, so everything was fresh, hot and good to go. Seems like when you went, the pulled pork was on its last legs…

You’re correct. It was still personally one of my favorite spots to go to. I find history of the food as appealing as the taste. Not the best bbq I had in KC but I’d happily go again.

Your taste and my taste or anyone's taste in cooking is always measured by our environment we all each individual have grown up from. You're still young, but as we all grow older our taste buds changes. That's right! Some tasty flavors will play out.. If someone never desired sweet things growing up, perhaps it's not so bad at all in their 40s.
I dunno, I feel like if your BBQ place has been open for 5+ decades and built up a reputation and a history, its had a lot more money, time, and leeway to tweak its recipes and try new things. Especially compared to a place that's been open for 3 years and is barely making rent. I always hold older restaurants to a higher standard than newer ones.
There used to be a place in Harvey IL called George's BBQ that sold ribs as "big end" or "little end". Only place I've ever seen do it that way around here. They also used to serve the ribs, hot links, etc over fries and a slice of soppin' bread and then drench it in a very unique, sweet sauce. It was one of my favorites - even if it wasn't exactly 'traditional BBQ'.
I love all bbq but I'll still stick with Carolina as my favorite as far as just the basic ingredients. I can make bbq I like better at home so I very rarely eat at a bbq restaurant. Extremely rarely.
We opened Mule Kicker BBQ this weekend in Warrensburg, MO, about 50 miles SE of Kansas City. I'd put our Central Texas-style barbeque and sides up against any BBQ restaurant in KC or TX. And much of our technique is thanks to you and other caring masters sharing the journey. And the opening was sensational!
KC vs Texas bbq in my opinion KC is better overall for the price. My experience is Texas bbq is so expensive compared to KC prices. Texas has better flavor especially in brisket but everything else is pretty equal compared to KC.
Bryant’s ruled when the a’s where here. It was close. Good meat sauce was funky. Gates is ok. Joes is over rated really. Q39 is a bit better but you will pay more for a nicer atmosphere. Zaria bbq has the best sausage and smoked ham. Fareway meat market has slabs for 12 dollars that equal any around. Haywards has the best fries.

Being from Scotland and as an outsider looking in you're pretty lucky in the states to have such amazing BBQ in so many different styles, we've got nothing here that comes close. My experience over there is limited but I've done a couple of the big hitters in Austin and Smoque BBQ in Chicago and they were incredible, Texas style definitely the king of BBQ for me there's no sauce on earth could change that opinion. Joe what's your thoughts on Smoque being a Chicago native? I thought it was brilliant
These regional styles of bbq are in my opinion, true American cuisine. It definitely has taken influences from places from countries we are originated from though.
I know I’m gonna get hate but the best thing I’ve ever had bbq wise in Kansas was the lamb spare ribs from Jack stacks… everything else was not my favorite thing.
I think you should emphasize that you’re talking about “Central Texas” style bbq more because Central Texas style bbq does NOT represent BBQ for the whole the state. BBQ in Texas is more than post oak wood and salt & pepper.
I grew up the KC way eating and smoking. I’ve had the Memphis and Carolina way. I’m with you on the central Texas way all the way now. It’s why I ordered a pit from down there and am about to get it. Thanks for video
MJY, I really appreciate the retrospective you provided in this video. I could not agree more with your assessment of old school vs. new school. Spot on in your reasoning and I believe that sometimes the subtly and nuance get lost in the hype, pomp, and circumstance.
Arthur Bryants is not known for its Burnt Ends or Pulled Pork. Never was available when Arthur was alive. You shouild of gotten the Sliced Pork Sandwich. Really All the Sliced Meats.... I was always a fan of burnt ends they would throw beside the slicer, but never a fan of their burnt ends soaked in sauce ... the 2nd on the KC list should be Haywards Pit BBQ
I started my love for BBQ when I was stationed in Kansas. Having eaten at a lot of the great spots there, I thought it was the best. Then, I moved to Texas.
Was born and raised in KC, and ate their BBQ for over 40 years. Then we moved to FL for a few years and OMG....their bbq is like it was cooked in the crockpot and had BBQ sauce slathered over it. Absolutely NO smoky flavor at all. FAIL! So before long we found ourselves living in TX. Of course TX and KC were always in competition together with their BBQ so we just naturally expected for it to at least come close. NOPE...hated it too for basically the same reason. So back to KC we came! Id hate to admit we came back just to get some decent bbq...so I wont. Ha! Our favorite here were always Jack Stack & Joes, but now that we live by one of the Gates' locations, we tend to go there more than the other places. Long live KC BBQ!!!

Agreed. People have specialties for a reason. And a lot of it had to do with history, not cooking ability.
The best BBQ I had in KC was at Oklahoma Joe's gas station. Their ribs are the best. Arthur Bryant's was good too. I didn't like Gates.
Both are are very good, I like not having to get up early and wait in a long line aspect of KC bbq

Short answer...yes...yes KC toos Texas. That being said, both are top quality.
Your taste and my taste or anyone's taste in cooking is always measured by our environment we all each individual have grown up from. You're still young, but as we all grow older our taste buds changes. That's right! Some tasty flavors will play out.. If someone never desired sweet things growing up, perhaps it's not so bad at all in their 40s.

I dunno, I feel like if your BBQ place has been open for 5+ decades and built up a reputation and a history, its had a lot more money, time, and leeway to tweak its recipes and try new things. Especially compared to a place that's been open for 3 years and is barely making rent. I always hold older restaurants to a higher standard than newer ones.
There used to be a place in Harvey IL called George's BBQ that sold ribs as "big end" or "little end". Only place I've ever seen do it that way around here.
They also used to serve the ribs, hot links, etc over fries and a slice of soppin' bread and then drench it in a very unique, sweet sauce. It was one of my favorites - even if it wasn't exactly 'traditional BBQ'.

I love all bbq but I'll still stick with Carolina as my favorite as far as just the basic ingredients. I can make bbq I like better at home so I very rarely eat at a bbq restaurant. Extremely rarely.
I don’t usually eat bbq out in chicago either.
We opened Mule Kicker BBQ this weekend in Warrensburg, MO, about 50 miles SE of Kansas City. I'd put our Central Texas-style barbeque and sides up against any BBQ restaurant in KC or TX. And much of our technique is thanks to you and other caring masters sharing the journey. And the opening was sensational!

@@knoxavebbq I've had brisket in tx at $28lb that would only be acceptable in a $5 school lunch too. Just haven't seen that price in a few years.
KC vs Texas bbq in my opinion KC is better overall for the price. My experience is Texas bbq is so expensive compared to KC prices. Texas has better flavor especially in brisket but everything else is pretty equal compared to KC.
I think you get what you pay for in my experience. And after doing it for so long, I don’t mind paying more for it. But I definitely understand.
500dollars for bbq 20dollars a pound is ridiculous for bbq food for the crappy meat cooks for 20hours and just salt and pepper on it

Try Bryant's again if you can. Go during the lunch rush and get the brisket and sliced pork. You guys had some of the worst stuff they have imo.
Bryant’s ruled when the a’s where here. It was close. Good meat sauce was funky. Gates is ok. Joes is over rated really. Q39 is a bit better but you will pay more for a nicer atmosphere. Zaria bbq has the best sausage and smoked ham. Fareway meat market has slabs for 12 dollars that equal any around. Haywards has the best fries.
I love the history of Arthur Bryant’s and will happily go for the nostalgia fact, but overall I was very unimpressed by the bbq that I’ve had.

Being from Scotland and as an outsider looking in you're pretty lucky in the states to have such amazing BBQ in so many different styles, we've got nothing here that comes close. My experience over there is limited but I've done a couple of the big hitters in Austin and Smoque BBQ in Chicago and they were incredible, Texas style definitely the king of BBQ for me there's no sauce on earth could change that opinion. Joe what's your thoughts on Smoque being a Chicago native? I thought it was brilliant
These regional styles of bbq are in my opinion, true American cuisine. It definitely has taken influences from places from countries we are originated from though.
I know I’m gonna get hate but the best thing I’ve ever had bbq wise in Kansas was the lamb spare ribs from Jack stacks… everything else was not my favorite thing.
Lamb ribs are some of my favorite things to eat. I bet they were amazing.

I think you should emphasize that you’re talking about “Central Texas” style bbq more because Central Texas style bbq does NOT represent BBQ for the whole the state. BBQ in Texas is more than post oak wood and salt & pepper.

I grew up the KC way eating and smoking. I’ve had the Memphis and Carolina way. I’m with you on the central Texas way all the way now. It’s why I ordered a pit from down there and am about to get it. Thanks for video

Arthur Bryants is not known for its Burnt Ends or Pulled Pork. Never was available when Arthur was alive. You shouild of gotten the Sliced Pork Sandwich. Really All the Sliced Meats....
I was always a fan of burnt ends they would throw beside the slicer, but never a fan of their burnt ends soaked in sauce ...

I started my love for BBQ when I was stationed in Kansas. Having eaten at a lot of the great spots there, I thought it was the best. Then, I moved to Texas.

Having had both Texas and KC BBQ, I can say without question, the answer is no.

Was born and raised in KC, and ate their BBQ for over 40 years. Then we moved to FL for a few years and OMG....their bbq is like it was cooked in the crockpot and had BBQ sauce slathered over it. Absolutely NO smoky flavor at all. FAIL! So before long we found ourselves living in TX. Of course TX and KC were always in competition together with their BBQ so we just naturally expected for it to at least come close. NOPE...hated it too for basically the same reason. So back to KC we came! Id hate to admit we came back just to get some decent bbq...so I wont. Ha! Our favorite here were always Jack Stack & Joes, but now that we live by one of the Gates' locations, we tend to go there more than the other places. Long live KC BBQ!!!
