    Hey! I'm not sure if you'll see this as I know was 2 years ago....but I've made 6 jars of this recipe and they all were eaten within 2 weeks! Amazing recipe...the lemon is so much better than vinegar! Thank you!

    I am in the middle of making this and can I just say that I am so GLAD you are sharing your content with your kitchen not in perfect condition!!! ( The wires for the hood above the stove). I am in the middle of my first canning season before we finished our main cabinet wall. So half my cabinets and supplies are in the mud room and the the drywall behind my stove and counters are not even primed!! Thank you.

      😂😂😂 It's kind of embarrassing but honestly that is how we live until we can afford to do Reno's. I've had a few people comment on how I have a "real" kitchen. It took me so long to get comfortable filming in my kitchen but we live a very basic simple lifestyle and our goal is to continue to be, and grow own food. One day, maybe, we will have a new kitchen, but if not I'm content. 🫣

    I just made this recipe. First year growing cucumbers. This recipe is awesome.
    So far I have made Dill Pickles, Bread & Butter pickles and now Sweet Relish.
    I made 3 quarts and 1/2 a pint.
    😋😋 I hope to make more this year.

      That's awesome! Good for you! There is so many ways to use up those cucumbers. This recipe and bread and butter pickles is probably my favourite two ways to can cucumbers. 👍🏻

    I am living in a small town in Italy. Have not found celery seeds or dill, just turmeric. I had a bunch of cucumbers from my orchard and decided to do this recipe with what I had... delicious!!!!

    This is a delicious recipe! It was the first time I ever made relish. The big difference and delight is Lemon juice but I also included the grated rind of 2 lemons! Wonderful if you are a lemon lover like me. This relish is going fast so today I'm making more. Thanks so much!

I mix mine with some yoghurt & make a cooling dipping sauce for Spicy Chicken Wings & it is so delicious.     Hi I just saw your post and think your recipe will be wonderful for me to make ! Thsnk you gif the video , might I suggest when your stirring metal against metal to do your instructions before or after the stirring , it was hard understanding what you were saying using the metal whisk in the pot maybe a silicone whisk would help I think !     Hi from Scotland, thank you for the recipe, i finished making a tweek version of this today with lemon cukes, (hopefully they will be fine ) and i also added jalapenos that i had left in the fridge, fingers crossed it will taste good ,i forgot to take a taste when canning typical me,,i grow my own so have been canning for a while now, but ive never made relish ? even though i make home made burgers and sausage, so looking forward to tasting thank you have a good day Anj

    When squeezing water out…. do you try to get every bit out??? I’m new to this and just put in fridge. I noticed one comment where she thought she may have removed too much water. Also, how aggressive should I be in rinsing to get salt out?? Ty for video!! You inspired me to make!!!!!

      As I squeeze the salt out I rinse with water. You don't need to be super aggressive some water left is fine. Just get ad much as you can. You are going to add a gel to it anyways. I feel like you can't go wrong with this recipe. That's why I love it! Let me know how it goes and how you like it 😊

      Thank you! I'm not sure about the carrots. You could try it, only you might have to pressure can it due to the carrots. I would research that part before adding the carrots.

    Thanks for sharing your recipe looks delicious!! Question though could one use clear jel in place of the corn starch as corn starch can break down in the jars over time which may cause issues so it's said. If one were to replace the clear jel with corn starch do you know would it be the same amount??

      Hi Hala, I am glad you enjoyed this video and recipe. It is delicious. The Dill is a herb that we add for flavoring. I just added a regular cooking Onion to this recipe. I hope you give it a try. It is a great condiment to add to sandwiches, burgers, many thing actually. It is really easy to make and it is a great way to use up some cucumbers if you have extra around. 🙂

    Hey I'm just making your fab recipe and wonder if I can use old jam jars to put the pickle into? They don't have a sealing ring...they're just screw top jars...which I will sterilise. If I can use them do I still carry out the canning process?

      Wonderful! I'm glad you like it! So I know people who have used old jars, but I don't recommend it. Everything should always be sterilized when canning, in my opinion. And yes if you want things to be shelf stable they do need to go through the canning process, anything that is not should be stored in the fridge. Hope this answers your questions 😁

      @@PloughmansBackyard ...Hi Kendra...I finished making the cucumber relish earlier and I love it...I will probably visit my Mum later this week and her and my Dad can try it...I'm sure they'll love it...but if they don't there's more for me.😂 I've just watched your video on preserving food and you've inspired me to preserve my herbs. I'm growing basil, lemon balm, oregano, rosemary and lavender and chocolate mint. The mint and lavender are in the garden all the others are currently growing in my house. Herbs outside are a bit hit and miss in Scotland so preserving them would be brilliant. I dried some mint just on my counter top and put it though a coffee grinder...with good results. I watched your bread and butter pickle video and will be making that soon. I love making lots of would too...my favourite recipes at the moment are carrot, ginger and lime soup and I have a lovely spicy parsnip recipe...I can share any recipes with you...if you were interested.

      Hi Arlene, I have never tried doubling the recipe. I know there are other relish recipes that can be doubled ok, but I haven't tried it with this one. If you do, yes you would double everything. The only issue with doubling is making sure it sets ok. Sorry I couldn't be more help. I am glad you love this recipe. It really is the best relish recipe I have ever come across. 🙂

      I would do pint size at 15 minutes, here. However, you may want to check out safe canning adjustments for your area. This is a good principle to go by: 1,001 to 3,000 feet, add 5 minutes ; 3,001 to 6,000 feet, add 10 minutes ; 6,001 to 8,000 feet, add 15 minutes ; 8,001 to 10,000 feet, add 20 minutes. Hope this helps.

      I will be canning this recipe this morning. I am wondering if I could reduce the sugar by half without ruining the recipe? What are your thoughts?
      I was always told to avoid using metal utensils on metal bowls and pots to avoid a metal reaction in foods. It also scratches plastic. I like silicone.

    Using oversized cukes, will the skins be tough or will chopping them up take care of that?

      No they should be fine. Chopping them will help, and soaking them in the salt in the fridge overnight definitely helps.

    The recipe sounds delicious but I am concerned about using lemon juice as I have always been told to use vinegar that is 5% accidity to counteract the chance of botulism. Is the lemon juice safe or recommended?

      As long as it bottled lemon juice yes. Not fresh squeezed. We have been using this recipe for years with no issues.

      I’d use a calibrated ph meter to check the acidity of the lemon juice to be certain. I have a jar of lemon juice, I’ll go check it and report back. The lemon juice I tested was Santa Cruz organic and it registered 2.9 acidity and the Heinz all natural 5% vinegar registered 2.8 acidity.

    OK, I made 5 pints. Tell me, ma'am, what do you think about slightly caramelized relish, if you get my drift? Only slightly. It's mostly the right color. I tried not to fill jars from the bottom of the pan. 😕 I learned you have to keep a close eye on the cooking relish and keep the heat only to bare simmer.

    I'm confused your written recipe says 2 tbsp of dill but you said 1/2 tsp. Or heaping of dill. I was going by the written and already put the 2tbsp thinking that was waaaay to much and then I heard you say the 1/2 to heaping part and about feel out! So which is it?

      Yes. It also says you can use it if you follow a tried and true recipe. This is that. Been using it for years with no issue. It is not a recipe I just made up. The problem is using it in things like pie fillings where the filling to cornstarch ratio is great and it is thick and not transparent. In this recipe it is a teaspoon or 2 compared to cups so it's a very insignificant amount and the recipe is transparent still. There is no fear of cloudiness and clumping. We also live in Canada so our regulations maybe different. I would never share something that is not safe. You can even check with corn relishes or zucchini relishes use of insignificant amounts of cornstarch in there recipes. It is one of the exceptions to the rule. If you are uncomfortable with this portion of the recipe, please feel free to use clear gel in its place

      I'm not sure the % of vinegar but you can definitely substitute the lemon juice for vinegar in this recipe.

    why have you discarded the seeds? did you add salt to the veggies after draining them? because you wash all the salt as I saw!
    you used bottled lemon juice, but fresh lemon juice might doesn't be working!!

      I discarded the seeds because the texture of the relish is much nicer without the seeds. It is just my preference. No I did not add more salt to the veggies, they soaked overnight in the salt and that is enough salt and washing the salt away leaves a great crunchy texture without the salty flavor. I did use bottled lemon juice yes. I like to use the bottled lemon juice strictly because I am canning it. If I wasn't canning it for long term storage, and just refrigerator storage I would have used a natural lemon. The bottled lemon juice has a consistent acid level that I can't predict with fresh squeezed lemons. Hope this answers your questions. It is a delicious recipe, I hope you will give it a try 😀
