    I set out one cucumber plant and it's gone crazy. Grown up the side of my deck, over the top, and half way across the floor. My first time growing a cucumber. I have picked 39 so far. Giving them to everyone.

    Deseeded cucumber slices with some chopped red onion, little bit of sour cream and mayonnaise, cracked black pepper, salt, some fresh dill and basil. Mix together and chill. Excellent salad. We eat it right out of the bowl.

    I don't know why I've never thought of freezing cucumbers... but this is a GREAT idea. I also really like the color of the cucumber ice cubes! Smoothie looked delicious! I LOVE homemade naan bread, I throw garlic in it all the time as well! Hope all is well!!

      I really love the color of those cucumber ice cubes too! I think they look like jewels with the mold of the ice cube tray too, which is always fun. Freezing cucumbers does alter the texture some just so you know, but they are still perfect for smoothies :).
      Naan bread is soooo good haha I completely agree!

    I wanted to say thank you for sharing that you can freeze cucumbers for smoothies!! I have way too many this year and have made all the pickles we need. I peeled and froze some thick slices, just to see if we like it. I made smoothies with yogurt, frozen bananas, a little stevia, and the cucumbers. They were delicious! I’ll be freezing a lot more! BTW, I’m 70, and it just goes to show that you can always learn something new!

    Aqua fresca is also great! Blend cukes, strain and drink ! You can add other things like basil, lime 🍋‍🟩 or whatever you like ! This is also all great way to use up watermelons 🍉 from the garden too! Add a pinch of salt and it’s better than Gatorade!

    Great recipe ideas! We definitely have an abundance of cucumbers right now, and as much as I love delicious dill pickles, sometimes it’s nice to mix it up! I think I’ll try your cucumber smoothie recipe this week.

    I grate my cucumbers and freeze dry them for tzatziki sauce. It’s wonderful.

    I have been pureeing my cucumbers for a while now for smoothies. Thanks for showing how you also just freeze them in chunks also for the smoothies. I may do some of that with my own from my garden. If I get them from the store, I have to peel them, but my own I know has nothing on them, so they are safe to leave the peels on.

      That is one of the great things about growing a garden! You know exactly what is going on and into your food. Just make sure your blender is high powdered for the cucumber slices otherwise dice them smaller before freezing 😊😉

    A canning jar will screw onto a blender so you can grind up dried stuff directly into the jar.

    I saw a recipe for cucumber bread (like banana bread) as another way to use them up. I haven't tried it yet, but people say it is delish!! I love them in smoothies too and also raw zucchini. YUM...

      @@bluebirdhomestead yes ma'am... my Grandmother use to do this with the massive harvest, so this year we had little Zucchini and loads oc cucs, sooo I tried it! Everyone loved it... I did end up removing some of the seeds in the bigger cucs, however I used the typical Zucchini recipes and swapped out cucs, worked perfect!
      Chocolate Chip Cucs Bread is my families favorite, however they also love the Cinnamon Raisin, and Cranberry Peach breads as well...

    Cucumber chips are amazing! Slice very thin soak in apple cider vinegar and salt (to taste) then dehydrate… they are amazing just to snack on or to add as a salad topping for a little crunch as well!

    Why not using fresh oranges and lemons? I make smoothies from only scratch, no processed stuff come in my smoothies or food

      If we lived in a climate where I could grow tropical fruit I definitely would! Sadly our winters are too cold. I buy it occasionally, but it is more expensive.

    Why do some people choose pink salt vs. sea salt vs. kosher salt vs. table salt???

      Different salts have different mineral values. I personally love Celtic or pink over table salt. I think they taste different too. -Cara

    Try some cold cucumber soup..... really does rock.
    Cucumber (peeled,seeded), sour cream, plain yogurt, dry mustard, mint, shake of salt...blenderize,...refrigerate, enjoy.

    There’s a refreshing cucumber cocktail I like too. Just muddle mint with about 1/2- 1 tsp sugar in a drink shaker. Add chunks of about 1/2 cucumber, juice of 1/2 lime, and ice. Your shaker should be no more than 3/4 full. Shake vigorously top with 1-2 shots of gin and about 1/4 cup tonic. So refreshing, and you can totally leave out the gin if you want.

    I love fresh tzaki sauce. It's so light and refreshing. It's been a while since I made any. Those are some great ways to use up fresh cucumbers. 💖💖💖

    Cucumber jelly with ginger, a few crushed red pepper flakes and garlic. Cucumber chutney. Great for roasted meats.
