I tried this and the first thing you should do is cook first the tapioca pearl because it'll take a long time. Choose the small size because it'll expand. After 1st boil, let it sit 5 min then rinse and make sure that the pearl will not stick to each other and then after 5 minutes, boil again and then let it sit 5 minutes then rinse and then boil again. Let it sit 1 hr. And it'll be perfect. No need to wait overnight. When you're boiling the soya milk, just use a little gelatin powder, it'll harden like a gulaman if you use the whole pack which is you don't like when you taste it. But I tried a different recipe for the 2nd time, I used Silk Tofu instead of soya milk and the texture and taste is similar to the taho of the Manongs. The brown sugar, I used the soft kind. Just boil a cup of water, depends on your liking before adding the sugar and then stir and let the sugar melts.

I measure temperature when baking not boiling but the heat is medium high.
