INGREDIENTS
Sauce
2 tablespoons water
2 tablespoons soy sauce
1 tablespoon vegetarian oyster sauce (or regular oyster sauce)
1 teaspoon sugar
1/4 teaspoon ground black pepper
1/2 teaspoon sesame oil
Slurry
1 tablespoon cornstarch
2 tablespoons water
Stir-Fry
1 lb (450 g) baby bok choy, cut to large bite-size pieces
Pinch of salt
2 1/2 tablespoons peanut oil
1 lb (450 g) brown mushrooms, halved (or quartered if the size is too big)
4 dried Chinese chili peppers
2 garlic cloves, minced
1 thumb ginger, minced
2 green onions, sliced

I had bought these three ingredients without a plan of what I was going to do with them and was thrilled to find this recipe. It was delicious, thank you! Only changes I made were no peppers and shiitake vs. brown mushrooms.

I thought the music was quite calming. Recipe is fantastically simple and delicious. For those who need it you cook mushrooms by when they give up their moisture, more if you want a stronger flavor, no time can be given as its by fee. Bok choy is cooked until it starts wilting could be 3-5 minutes depends how you like it, just don't cook until its soggy. again its not a time thing its a feel for it and watching it. A quick stir at the end as you incorporate the other ingredients are all in seconds, maybe 30 seconds for garlic and chilis enough to energize there aroma and flavor but not to burn them.
The longest cook time is the bok choy in initial prepping but it only takes a few minutes in the steam . This is a quick meal.
Like most Asian stir fry dishes prep time can be longer than cook times. so absolutely get everything ready as there is no time during cooking to do anything else. Nice recipe.
sometimes i cook for my grandma and i have to make those veggies a bit soggy but not too much. I have to be extra careful with the timing when it involves lots of varieties, like carrot, snowpea, longbean, sweetcorn and bokchoy/waterspinach. Still got a lot of scolding because i cant grasp it yet T_T

It is a Debuyer 12.6" carbon steel pan. It is lighter than a cast iron pan but still quite heavy duty, plus it is quite nonstick after it's seasoned (like cast iron pan).

I just made this and can't wait to serve to my husband. Had to make a few substitutions but even so it's really good. Will serve with basmati rice. I'm also glad you have a recipe website so I could go there to follow all the directions, much easier for me this way.

Can't wait to try this recipe! Stupid question. Why is the corn starch slurry mixed mixed separately instead of with the sauce before cooking? What would happen if I did mix them?
Because the sauce needs to cook longer to glaze somewhat on the vegetables while the corn starch would break down after that much overcooking
