I've been there December 2011, if you get the chance you must visit Toriki and try the food. Almost everything shown in this video I had - and it was spectacular. Pairs well with beer
The chicken they use in this restaurant and in some other japanese restaurants are a special kind of breed, where they go under heavy and strict sanitary control as well as being slaughtered on the day of service
This was the first time I ever heard of, or saw someone, eating pink chicken meat. It instantly made me wonder about food in America and the quality of products sold in grocery stores.
Chicken "sashimi", known as toriwasa, is considered by some to be a delicacy; the Nagoya kōchin, French poulet de Bresse and its American derivative, the blue foot chicken, are favored by many for this purpose, as, besides their taste, they are certified to be free of Salmonella.
Do you mean it was closed the day you went or something more serious? Really hoping the master is ok in the covid age. He's no spring chicken but he sure is a joy!! Go for the food, stay for the smiles.
It was closed the day I went ( New Years holidays) actually I heard he is still working and running Toriki plus they opened another branch too. I only got to look inside the windows of the restaurant. But at least I got to see it where the late Anthony Bourdain went too back in 2008.
They serve the Chicken tataki, Sashimi etc. (Raw Chicken). from the blue food chicken that have no Salmonella bacteria. that is the reason why they serve it, not dangerous for u.
You're missing the point, the Japanese pride themselves on the freshness and quality of their food. They would shame themselves if they served half-ass food like here in America.
The fever I have right now was apparently sent from hell, because I did not salivate at the slightest at the sight of all that delicious chicken. Normally, my desk would be wet by the end of the vid, right now.. nothing *sigh*
Going there next week, I'll try to find the make of the electric grill. If I forget, it is because there are bigger fish to fry on this trip. Sapporo, Niseko...
BTW if you try cooking US store bought chickens like this you'll get sick. I learned that the hard way, but it was worth it. Actually i think I'm going to try to some straight up raw chicken tonight.
That's all fine. But you're missing the main point that contamination can and usually occurs at the restaurant during the preparation itself. This is also beside the point that usually meat from farms/factories is tested and given a seal of approval before being sold to markets or restaurants.
You are mistaken in assuming that I am being disrespectful towards the culture. But I forgive you for this criticism. Sushi and Sashimi restaurants exist worldwide buddy, they are very popular, and they too abide by their local health codes. On the other hand, board-certified salmonella-free chicken is not risk-free. I, however, will not forgive you for breaching the 9th commandment and blatantly declaring that replicable and verifiable scientific findings are falsifiable. For shame.
Stats are easy to make up, if a whole culture believes it is safe to eat raw chicken and do so themselves, there is absolutely no reason why you shouldn't eat it yourself. It's almost disrespectful.

It's good stuff, but the portion is pretty big so be ready! I recommend the neck too, from the "back" ura menu. The sauce with the tataki doesn't look that special but the flavor profile is just right.
Love this place ...been here twice ...going back again in Jan 2023

Anthony was not a 5 star chef.
He was a great writer and best commentator.
Miss his reporting style.

Nicest thing I've heard
Are you sure?
I went to this place 2 weeks ago, it was absolutely fantastic!

My favorite Bourdain meal ever. Went out of my way to eat here. Was incredible.

i love his willingness to eat foods outside of his usual sphere; still amazed and saddened by his passing...
The sad part he left his kid without a father by checking out like a coward.

Really easy to find as it is near railway station
Very hospitable and love taking photo with guests. Delicious food too

Raw meat is safe to eat, as long as it's freshly cut and properly stored on the same day.
Other countries inoculate their chicks for salmonella we don’t
If a restaurant in Japan got someone sick there’d be a huge investigation
Two years gone. RIP Tony. Miss you so much man.

I went to Toriki back in January but sadly it was closed. But still a great experience especially since the late Anthony Bourdain went there.

Gotta love a good izakaya
nothing I miss more than sitting down in Sapporo and having chicken yakitori.
Sandor Clegane approves

I'd like to know what knives the chef here uses. They look _remarkably_ sharp.
Man i miss the Chicken skin skewers.
@chefkoo i know tori does mean chicken but i think he meant they serve other meat as a substitution for chicken
RIP Tony

those little shops always look good!
love this stuff, I'm making chicken heart, gizzard and liver yakitori tonight at home minus the 900 degree grill lol
You can see the old guy taking him seriously with the chicken skin dish
I saw him handle raw meat with his hands then touch the cooked meat while cutting it. Does he wash his hands between the two every time?
Don't remember. But they do have an English menu. If you do go make sure you make a reservation as the restaurant itself is not big.
RIP you Absolute Fucking Legend.
