      Yes! It’s amazing to see knife skills in motion. A chef friend of mine said the best sushi chefs are precise and consistent with their cuts and don’t waste the fish. Seems like it’s the same with yakitori chefs too.

      The way he broke down the shoulder + breast with the bolster of the knife 🤌 I wish they would release an extended/uncut version of just him butchering the chicken, hell I'd even pay for it. Western chicken butchery feels like kindergarten compared to this man's poultry PhD.

      It is great to see him work similarly with chicken as a sushi chef would with their protein. Single strokes in one direction is to preserve the integrity of the meat, also hence Japanese knives being single bevel 🙂

    I have searched and watched yakitori videos for a long time. This is the third time I watch videos by chef Kono. This is by far the best and most detailed video about how to make yakitori.

      Definitely look at Yakitoriguy if you want super indepth guides too. Each are like 30 minutes - 1 hour guides on each skewering each part!

    I love yakitori! In Japan, my buddy and I will go to a yakitori restaurant/bar buffet and we’ll drink and have a lot of skewered dish of all flavor. We’ll order our food, drink while we wait, eat, talk, and repeat. The best part is the end bill is less than $50 for all of us.

    Yeah, this is not your regular restaurant you stop in for a bite to eat. Looked online, and there's no menu, but did find an article from 2022: "At Kono the only meal available is an omakase dinner, for $165."

    Hello sir, i wanted a yakitori chicken skewer. But in my place the only thing available is teriyaki sauce, however the sauce is really thicken. I saw yakitori sauce tend to be less thicken compared to yakitori sauce, should i add a litte bit water to make it less thicken or just use the way it is

      So can I, thin skewers like that are easy, even a thermometer is mostly a waste of time for a half decent cook on almost any cut of meat. But he’s got lots of other cooking skills too🎉

    He literally shows us all his way to cut chicken, his charcoals, and the contents of his sauce. No secrets. The real question is: can YOU replicate his cutting technique? his skewering technique? setting the right amount of fire temperature by controlling fire with a fan? That's mad skills that comes from training and experience. Really great yakitori chef!

    Does anyone else have a problem with the "holding" end of the the skewer being contaminated with raw chicken juice during prep? Doubt that handle gets hot enough during cooking to be sterilized
