Specifically, you heat butter over a medium low heat until you see solids begin to form at the bottom. It's a middle step in making the, and it's delicious in anything that you would use normal butter in!
I also hear that Canadian sticks of butter may be larger than American ones, the ones Ben had in the bowl looked huge! Either way best to just weigh out 8 oz of butter instead.
