Keeps the ingredients from heating up (which can make the olive oil taste bitter) and makes everything much smoother due to the additional friction, Also, rub the chickpeas between your hands in the sieve to take off the skin, under running water so the skins come to the top and you can skim them off.
If I have humus in the house I will eat it daily. In fact I'm out and running to the store today specifically to restock. Ben live you best humus filled life and happy birthday!
