I'm pretty disappointed in the level 3's creation to be honest. He chose to make a cake version of a dessert known for being slapped together, when the point was to make a layer cake. Not saying all layer cakes should have 15 layers, absolute symmetry and perfectly smoothed icing, but he literally just slapped the parts on top without any refinement or technique; he didn't even clean off or cover the browned edges which would be very dry and tough to eat. The thing also looks very unstable like the layers don't even stay together when cut. Acceptable for level 1 or 2, but not a level 3. I wouldn't pay for that at the store.

There's actually a lot more care put into making naked cakes so that they can appear rustic yet still hold up. This level 3 only used two huge layers(where he should have cut it into 3 or 4) so it's unstable and unwieldy to eat, he didn't do a syrup soak or a crumb coat to prevent the cake sides from drying, and most importantly he used the flavour concept as an excuse not to clean up/decorate the cake. No bakery in NYC would hire him if he presented this as a demo.

Daniel's recipe is basically a workout. The Level 1 Chef is not amateur at all, she is so calm and put together and made a vegan cake that I would actually love to try. And love this Level 3 chef because he didn't do anything super duper fancy.

I tried it and it turned out really well! If you had tried his recipe, you wouldn't have called it disastrous. Fruits and cheese go really well together. Even Martha Stewart puts fig jam and pear slices in her grilled cheese.
I absolutely love all three. Daniel is always one of my favs and I really like level 3. Level 1 is definitely not a level 1. I love it when all three chefs are entertaining and they take the craft seriously.

I don’t want to sound rude to the level 1 chef, I love coconut and the idea of vegan desserts but sometimes vegan ingredient alternatives can be much more expensive or hard to find depending on the country/area you live in
And many peoples bodies can’t handle a plant based diet, it’s just not feasible for a lot of people and so many vegans just refuse to acknowledge that. In most cases, it’s a big privilege to be able to have that diet/lifestyle and you gotta recognize the fact that not everyone has that

I feel like level 1’s are not properly recognised. They are a chef nonetheless. Anyone can be a level 0 chef but if anything, showing these different levels show us what can be reached with more practice. After all, that’s why there is the science part afterwards to show you different ways to cook and how to improve your cooking
