    The polyphenol concentration difference between green and black olives is a great piece of info. Thanks!

    I just ordered 3 l of olive oil from Greece and every time I am around it, I just want to drink it. It is gorgeous.

      From experience: don't drink it unless you are okay with emergency bm/ explosive diarrhea 😆

    Thank you very much. I am always choose Picual for salads, Arbequina or Hojiblanca for cooking. Spanish Olive Oil is excelent.

    There's a trick going around with a green laser pointer to test the quality of your olive oil. If you shine the green light into the bottle and the light turns yellow, the olive oil is rancid. If it shows orange, it's good quality. The bottle does not have any influence over which color the light will show, whether its in its container or a drinking glass. I have two of the same olive oils in my house. One in a small bottle and one we purchased in a large container. the large container was showing orange and the small was showing yellow. It seems to be true, but I wish the experts would do something on this to see if its some sort of myth.

    I’m a little confused because I thought that black olives contained more hydroxytyrosol but because of canning methods, black olives lost their hydroxytyrosol content. Is this still true?

    actually cured olives still have way more polyphenols, just 1 olive is 2mg polyphenol = 1tbsp high polyphenol olive oil

    Just eat the olives, you'll get the fiber, and nutrients that wouldn't be in the oil
