You can boil the potatoes in a cooker by placing the potatoes in the container and water outside. Boil with the skin so u get the max potato flavor while preventing them from being too mushy. Dry boiled potatoes will soak less oil.

Yes potatoes are usually cooked in cookers in India but I never do that here as they take hardly any time to cook in a pan

Can you be more precise about the types of chili you are using? There is quite a variation in both heat and flavor.
