    I love trying new tapas recipes and all of these suggestions look delicious. I'll have to try the version with the tuna and anchovy combination first though, it looked ah-mazing!! Love those briny flavors. Beautiful food, as usual. 😍 Thank you for the inspiration! 💕

    All of these look incredible, but wow... i had to pause it on the shrimp, and get something to munch on, i was salivating bigtime! I WILL be making shrimp that way, soon as i buy some!

    I recently saw that Spain is the healthiest country in the world. I would love to see what an average day of eating in Spain looks like from breakfast to dinner, if you're up for that sometime! These pinchos look great! Can't wait til my husband and I can travel safely, we're definitely going to Spain again.

      Spain has the one of the best health care in the world. With some of the best health out comes. That's why they are the the healthiest. You can go vegan and still die young if you're not able to easily see a doctor.

    Nice one Albert. Love all those but my fav has to be the shrimp. May I make a suggestion? with the left over oil from cooking the shrimp, how about laying down the bread on one side in the pan and toasting the bread? soaking up the left-over oil?

      believe it or not, there was not much oil left in the pan as it most of it got absored by the shrimp, but it´s still a great idea! much love :)

    Gotta be careful flipping the tortilla with the plate technique because you might get a drop of searing hot oil on your wrist. I always wear an over glove that protects my lower arm, or wrap a tea towel around my wrist.

      Here in Spain, we don´t need that because the amount of oil in the pan is minimal. There´s no risk at all.

    By no means am i telling you what to do as you are the master, i fry the bread on one side in olive oil just for that surprise crunch in the middle and save it absorbing too much of the juices in the topping. This weekend i will be trying out a few of your dishes, brilliant channel, full of inspiration.

    Can you serve the shrimp and spinach omelette ones cold? Or does it have to be warm/ hot, straight out the pan? Im looking for suggestions that enable me to prep everything beforehand, and then put together later on.

    What kind of bread was that? I bought baguettes and I could cut a thick slice but non of them could hold 3 shrimp nor that much potato salad. Im missing something here.....

    These are named *Pintxos* , and are originally from the Basque region that is located in the North of the Iberian Peninsula. I’d qualify this as a Spanish attempt to dissolve its Basque heritage...

    Unfortunately, I had to wait until I was 16 to have good Spanish flavours leave their indelible imprints upon my australian tastebuds...(starting with chorizo-pan, the lovely fragrant fat orange one) , but I can say Albert, these tapas today carry so many of the delicious flavours from the youth I wish I'd had 😍. Mmmm, so good. I think these will make a fine MEAL sometime VERY soon in my kitchen. Thank you

    Wine and food pairings aren't your emphasis. However, if you yourself attempt to pair wine or beer or spirits with any of your dishes, please make a reference to see in your show notes what you tried, whether you liked it, whether you would have alternate suggestions. In this regard, just as I have seen in one episode a recommendation of a particular Texas olive oil, perhaps you have a wine pairing as to a particular producer, but generally, recommendations to a varietal of grape, the type wine, such as Merlot or Tempranillo, etc., likely best as procuring specific producers' wines is not an easy thing in many (most?) situations for your subscribers.

    Those all look tasty, but can you suggest a replacement cheese if I can't find Manchego? I have no idea if it is in any of the stores around here so going to have to go searching. Also, when you grate the tomatoes, the skin does not get grated, correct?

    Thanks for this. I once had the Spanish version of Bruschetta al Tonno at a restaurant called La Tasca and it was absolutely delicious! I tried several times making it at home but it was either too oily, watery or gritty etc. The lovely celery flavouring was either lost completely or if plenty of celery was added, it became too watery. The tuna had an unpleasant texture which kind of grated on the teeth - I can't really explain it.
    I know the recipe consisted of toasted garlic bread (baguette slices), a hint of onion, olive oil, canned tuna, mayonnaise, celery and sea salt. Maybe they used their own mayonnaise? I doubt that this would have made much of a difference though. I don't like the texture of onion and too much can make me sick but liquidising it and then adding it to the remaining ingredients in the food processor made it slightly watery. Grating the onion intensified the flavour a little too much - it became very sharp! Substituting it with red onion gave me reflux!

    In Toledo, Ohio, a tomato costs over a $1.00. Cheese is outrageous, about $8.00 a pound. Bread has gone to really high prices, that baguette would cost about $5.00, and olive oil least quality is about $5.00 for 5 oz bottle. I would estimate that these three pieces of bread with toppings would cost about $3.50 a piece.

    Please can you explain the cheese, the name again, and perhaps what alternative I could use in South Africa.... ( Is is more like a Peccorino, or a Parmesan) I've never seen that cheese here, and although we have a big Italian community, I dont think we have as big a Spanish one.... Many thanks.

      He did suggest toasting the baguette slices as an option, but traditional pinxos are not made with toasted bread.

      More like a frittata than an omelet I'd say. But yes, I to usually think of "tortilla" as a flatbread, but an image search on Google clearly shows that in Spain this is different. =)
