If you're trying to get closer to the same flavor as Torchys they use Land O' Lake Extra melt cheese and a red salsa base thats boils until most of the water is reduced then the cheese is shredded and added in.
Yeah i use to work at Torchys and there is no other queso like it by far the most superior quesos of all quesos!
and for cheese we used cheddar that we shredded daily.
Torchy’s queso is GOATed and by extension, your own. Can’t wait to try this!

When I still lived in AZ and CO, I saw dudes in NM and AZ smoking their chilis. I'm guessing they roasted it like you did after it was smoked. The taste of those chilis were out of this world.
Thanks to your great guides on making smooth melty cheese I'm now the designated Queso master for my group of friends. This also works great with cold-smoked cheese.

I love seeing Americans putting their twist into Mexican food, when I was younger our queso dips were pretty basic, usually consisted of Oaxaca cheese, peppers n veggies with chorizo mixed in, now people made hundreds of varieties of queso dips.

Hey Brad love your videos and I started making my own briskets with your help. They came out Fantasteic as you say. I also live in Texas (San Antonio area) and our family loves queso. I also grew up in the Northeast (NY) and queso is def a Texas thing but it is amazing. Might have to try this out, looks togood to not.

One of my chef buddies told me YEARS ago that Torchy’s queso is so good cuz they use real cheese - not Golden Velvet like almost every other restaurant. Take that for whatever it’s worth.
They use Land O Lakes Mexi Melt. Very similar to velvetta.

How does the heat work on his butcher block? Is it some kind of induction set up?
He heats the pan on a separare stove and puts it on the chuds logo base to stir for the camera.

What is that burner thingy you warmed up the sauce with? and how does it work?
It's the Chuds Trivet. He uses it to place the pot in front of the camera and not burn his cooking table. He still uses his stove top for heating purposes and the trivet for when recording the process.
Oh ok….here I thought he invented some new WiFi cast iron burner!

The plate is for him to put a hot pan on and stir in front of the camera. The pan is heated on a separate stove.

In order to make smoked cheese, start with smoked cheese. Then add another flavor of smoked cheese. Add smoked cheese to taste.

Do you see the burner on the right side of the screen? He cooks on that and then puts it on the trivet because it is easier than moving the camera.
