    I owe you a virtual apology 🙂 I tried this recipe and once the ingredients were in the pot and started the two hour slow cook, I tasted the sauce it to see if I needed to make any adjustments. I told my wife this recipe was not going to work out. I literally thought it would end up in the trash once it was done cooking. I thought I must have done something wrong. My wife then tasted and said it would be good let it finish cooking. After cooking for a couple hours and garnishing as recommended, I could not stop eating this chili. I love this chili! Thank you for being out there and sharing great food... I learned something and I'm better for it. You have a new fan.

    I won my first chili cook off with this recipe. Used a local smoked pork sausage without the casing instead of ground pork. Added bacon also. Followed everything else pretty closely. Thanks for sharing the recipe!

    I love chili. I ate it for breakfast in my 3 high school years to graduation in 83', and I still eat it. I'm gunna try yours soon!

    Did this this last weekend on a Bullseye pellet grill, less the anchio chili (we adapted) after the initial simmer on the stove, I took it outside to the grill and let it simmer about 225F for the 2 hours stirring every 30 minutes or so, and omgosh this was excellent. Our friend formally from Cincinnati (we live in PA), said this was "better" than Cincinnati 3 way Chili. This was an amazing chili, today Im having it over Beef Hotdogs.

    As a former Canadian, now (20+ years ago) American citizen living in TX, this is exactly how chili was made up north. Don't knock it until you try it. I love a bowl of red as much as chili with beans. Excellent recipe my friend. Hope you hit 100K soon!

      Oh Yeah Heath, tried the chocolate. My pots still melding flavors but I think it’s going to be great! I’m gonna take some to the master chef, aka Mom and of course Dad too tomorrow.     Couldn’t find course ground beef? I figured you’d have a countertop meat grinder to take care of that problem.
    Have to say, that’s a better use of minute steaks than what I remember eating as a kid, LOL.
    Ground pork is a good addition, but I like to throw in some chorizo in mine. The chocolate is something I’ll have to try.

      Can't go wrong with some chorizo. Probably gives it a good kick too. I think you'll like the chocolate. Gives it a good depth of flavor.

    Chili is one recipe that I think I might be able to hang with you with. What we haven't had here in Colorado is any chili weather. It has been in the 90s most days since Sept 01, way above normal. I do make my own beef bone stock and usually use brisket point meat in my chili + some Italian sausage. I use the usual spices, but also use some pureed smoky chipolte salsa, dried chopped chili peppers and some chocolate habanero hot sauce. Just a touch of cinnamon too. That is most of it, but I won't even give you ALL of my secrets 😎.

    I followed your recipe to the T.
    Some good tasting chili!
    The next pot I made I left out the cinnamon, cocoa powder, brown sugar, beef bouillon and the tomato soup.
    I used tomato paste, more beef broth, more beer, green and red peppers and I used masa to thicken it up.
    That was some good chili too!

    This is on like donkey kong this weekend! I live in MN and am making this on Saturday as temperatures are barely in the low 50's...I will re-post how amazing it is as I expect it to be. I thought about smoking it but it probably doesn't need any smoke flavor I bet it is crazy good the way it is~!

    Love you use the Bush beans instead of Brooks. I've made a ton of chili and for some reason it never came out correct with Brooks. Bush seasoned chili beans always worked great for me. Looking forward to trying this recipe. Have a great week!

    HOLLY HORSE PUCKEY. Just finished dinner that was by far the best Chilli I've ever had. I used thin cut tri tip instead of minute steak and added a 1/2 cup of fire rosted hatch green chillies my whole fam loved it. Worth a try. Ps it's a little spicy

    The seeds in the Jalapeno's are not hot, it's the vein within the pepper which creates the heat. Fact 100%

    Made this chili today. Outstanding taste! Left out the jalapenos because it's too spicy for the wife but otherwise made it the same. Will probably be doing this chili for the foreseeable future.

    That meat looks boiled. If you let it keep cooking all the water will cook off and you will get a good maillard reaction to give it extra flavor. Then you can do the vegetables after you remove the meat and deglaze all that goodness from the meat off the bottom. That is a lot of flavor you are missing out on.

      @@HeathRilesBBQ I know it wasn't boiled. I said it looked boiled. That's why I recommended cooking off all the water and browning the meat. I am sure it tasted great. I think it would taste better if you got some good maillard reaction on the meat.

      It's pretty similar. Depends on the butcher and where you get it from. The burner I got a while back from Costco or Sam's. It can in a kit with 4 pans.

      I took the lid off 1hr in and added 2 tablespoons of corn startch to thicken

      I left it on. I'd take it off, stir, and put it back on. Can also leave it off for a bit if you need some of the liquid to evaporate.

      Chili can have beans. Personal preference. Like I said in the video, I don't typically put beans in mine. If I do, it's not a lot.

    Best way to fuck up a good bowl of chili is add shredded cheese and sour cream..............

      Always add shredded cheese and sour cream to mine. Pretty delicious and feel like it's fairly common.

      @HeathRilesBBQ sure. But I am speaking of the very definition of the dish. Are you familiar with CASI (Chili Appreciation Society International)? Or Texas chili law? People can eat any dish they like. Good. But chili has a particular definition. A dish with beans is simply, by definition, not chili.

      @@ryankiblinger3382 Totally a personal preference. Some people like beans, some don't. If you check out our channel, we've made several different versions of chili. No one way to do it.
