This recipe tastes just like I'm back in Jamaica! I lived in Jamaica for a summer a few years ago and absolutely fell in love with the food (and with the people, beautiful landscapes, and culture of course too). I used white rice instead of brown so it only needed to be cooked for about 10-15 min once I added the rice/coconut milk. Such a great authentic recipe, can't wait to make it again, thank you!
As per usual, ignorant people will always make ignorant statements. If you don't like the way he cooked it, then first of all don't waste your time and watch and second cook it the way you prefer. Everyone has their own interpetation of cuisine and therefore it is up to you to make it your own. This has nothing to do with if it's Jamaican or Trinidadian or guyanese or bajan or wherever. Hi! I found a really neat and easy way to cook any rice. I find that cooking rice on the stove-top can be tricky and cooks uneven. What I always do is after adding all my seasonings and flavors to a pot and bringing to a boil, I add the rice like you did and bring it to a rolling boil again. BUT, then I transfer all the contents from the pot into a clear glass baking dish, cover with aluminum foil and bake in the oven at 350 degrees for 30 minutes. This process makes the rice cook consistently through and comes out perfect every time! Can't wait to try your recipe for my husband!
That’s a lot of work I have a tip, when the rice is rising and the water is almost dried up put foil over the rice and put a little bit of water on top of the foil then put the cover over. Stir the rice every now and then so that it can cook even. It also depends on what rice you buy.

Ohh my gosh, I made this rice and the macaroni pie from your site and jerk chicken. I am soooo freaking full it was deeeelish!!! Really nice. I am going to try this method; I usually boil the peas differently, sautee the rice with the veggies and stuff in butter to seal in the starch then throw the water in and add the peas last.

Whenever I had a taste for Jamaican rice and peas I would purchase it from a Jamaican restaurant in the community. I have to say no more I'm gonna keep making my own. You also have to keep in mind you'll a need that "additional water" because you have the beans and the rice "competing" for liquid absorption. Another mistake is not keeping the lid close so you don't let steam escape which plays a big role in fluffy rice as well. My mother has this down pact without measuring, still amazes me! Love my Island heritage :))
i love your cooking finish product looks delicious.one thing i rather to use the green pepper. i never used the onions but i will certainly try it next time . love that rice and peas with some oxtail...thank you God bless.

Lovely recipe! I find that basmati rice gives the best results. It's more expensive but you get what you pay for - quality! My rice is always separated and fluffy.
