Using chopped bone-in chicken will provide more than enough tasty goodness to the stew when eliminating the skin and excess fat. You're making a quick chicken stock while making the dish. Win-win! And I love the great knife skills. A true pro.

I had learned to make curry chicken many years ago from my Guyanese friends. and even though I had made it several times and although each time this I made it has turned out great, In my opinion this one has been the my best one. Thank you! That's in response to your question about Caribbean people getting salmonella from washing chicken. Never happened round by me. We does know how to wash chicken (and beef and duck) cleanly without splashing things all over. I think you could have saved that chicken back for some soup, though, along with those wing tips. 😋 This video is the real deal. Thank you, Chris!
I'm going to have to try this one again. I appreciate the way you broke down that chicken into smaller pieces, which speeds up the cooking process. Another great touch in this recipe is leaving out those extras. I love my coconut milk, curry leaves, and bay leaves, but sometime leaving all that out brings out some of the subtle flavors in the spice mix and the chicken too. One thing I would do differently is use coconut oil instead of olive oil, since it has a higher smoking point. Otherwise, I think this was a perfect curry chicken. Thanks again for a good video.
Hey Chris. Just made this curry and it is on point. I learned how to make curry chicken from your video years ago and was equally impressed by this updated version. I stuck with adding the tomato ketchup you added in that vid, since I feel it genuinely adds depth to curry. Especially true if the curry is subpar. Great and flavorful recipe. Also I had no potatoes on hand so I used some carrots and the curry carrots were delish 😋.
@el-Cu9432 ketchup is a plus AND I also add a little bit of ground dark roast coffee. 1/2 - 1 tablespoon worth depending on quantity of meat/vegis/water. It gives a nice fuller taste!
I need a knife sharp like that. Can't seem to sharpen mine as newly bought at all smh... I enjoy watching your videos & those tips... can't go wrong without them😃 and yes I'm one of the 'idiot' that wash chicken. That's the 1st step to great seasoned meat!
