I made this! It came out PERFECT!! Funny story...my boyfriend for some reason thought the scotch bonnet I put in the rice was a little tomato (It was a red one) since he couldn't wait until I served him and took a taste while I wasn't looking. Needless to say he bit into the whole thing and immediately regretted it! Scotch bonnet bit back!!!.. After he composed himself and was able to to feel his tongue again.. he enjoyed the rice and peas with curry chicken I made.

Everyone cook's different, home here we cook our peas in abt 2 cups of water, with garlic pimento ginger when it starts boiling we add the coconut milk to sink the peas, when the peas is almost cook we add ekellion, tyme, pepper, butter nd salt if you cook with salt, and allow that to simmer properly then wash your add it.

It took me years to perfect Rice/Peas. My husband is Jamaican and of course I try to cater to his cultural foods for the past 25+ years. Measuring was the key for me to master it! You ROCK DedDY!!
It would be great to have quantities of the main ingredients ... I estimated the rice at 2-3 cups but what would the approximate measurement be for the peas? Beautiful video. FyI...If you chose to put the salt/season salt in from the beginning, it takes longer for the beans to soften. If you were to add everything except for the salt in the beginning the beans would soften in half the time.

Girl, I learned an amazing trick from an old Hawaiian woman when I lived on Maui..... after you wash your rice, then you add just enough water to bring it up to your first knuckle. So with that being said, put your pointer finger on top of the rice and bring the water level up to your first knuckle or joint excuse me no pun intended 🤣 Works like a charm every time ! No fancy kitchen equipment

I just made this OMG!!!!!! the touch of butter is the bomb and it taste just like the peas and rice I get at the Jamaican place, I will never do can beans again and the washing the rice thing was new to me, but I liked it. I winged it on the measurements and it came out great, not mushy or too sticky. Amazing recipe, I am hooked for life.

Love your channel!! Just a tip for those who get the water wrong and use a rice cooker, what I do is wash the rice, put in the rice cooker and strain the juice from the pot to the rice cooker and measure the water properly... after the rice is done, stir and then stir in all the peas and “garlic / onion / etc..”... it comes out good too ;) haha
I am not a good judge of the "one inch" rule so after the peas are cooked i drain the pot to see how much water is left and and add rice accordingly. Put everything back in the pot , bring to a boil and then simmer for 20 to 25 minutes. (2 cups water to 1 cup rice always works like a charm). Love Deddy's seasoning tips though!!

I love to make Asian foods and they also swear by washing the rice! It gets rid of excess starch (so it doesn't become gluey), and any impurities such as bad rice grains, little bugs or what have you, and is just more hygienic all around (considering when sorting the rice, the farmers tend to walk on top of it!) Glad to see its universal :)

Thank u.... When I tell people it better to cook the peas in the milk as well as the season them mock and quick fi say u can't cook then ready to "intervene" and ruin the pot. Dem no realise all know what I talking about. Most wait till them cook the peas then then season the pot and no realise the milk no cook to the point where the flavour run in. They fail to realise coconut milk cook longer minutes actually gives a different and much better flavour to the pot than ever. You see it in the peas water and everything when it done and the smell is great from start to finish. You smell the flavour. Plus the green pepper 😁 is the secret to good rice and peas. U can use the yellow but I always try and have the green as well. When I don't have the green I approach the entire dish differently. A my mother teach me to cook and she learn from her grandma who if alive would be 140 odd year old.m and I'm in my early 30s ... So she carry the authentic Jamaican style from the 1800s and much earlier because a bay grandma's help raise and teach for hundreds a year's.

Love your channel!! Just a tip for those who get the water wrong and use a rice cooker, what I do is wash the rice, put in the rice cooker and strain the juice from the pot to the rice cooker and measure the water properly... after the rice is done, stir and then stir in all the peas and “garlic / onion / etc..”... it comes out good too ;) haha
I am not a good judge of the "one inch" rule so after the peas are cooked i drain the pot to see how much water is left and and add rice accordingly. Put everything back in the pot , bring to a boil and then simmer for 20 to 25 minutes. (2 cups water to 1 cup rice always works like a charm). Love Deddy's seasoning tips though!!

I have tried rice and peas so many times and just can’t seem to get it right. I’ll try this. I’m so determined to make a perfect pot of rice and peas. Not too mushy not too hard but just right. 🤞🏽
I love to make Asian foods and they also swear by washing the rice! It gets rid of excess starch (so it doesn't become gluey), and any impurities such as bad rice grains, little bugs or what have you, and is just more hygienic all around (considering when sorting the rice, the farmers tend to walk on top of it!) Glad to see its universal :)
NEVER skip washing the rice. I appreciate you adding that washing also removes excess starch.

I love your channel. I'm American but my husband is from Portland Jamaica 🇯🇲. He use to be the main one cooking the Jamaican dishes, but Deddy got me in this kitchen cooking all the time. I've used your oxtail, pigtails and peas, turkey wings brown stewed, rice and peas and these are just a few. My husband has no idea how I learned but I thank you both. I'm officially a jamerican 😆

Thank u.... When I tell people it better to cook the peas in the milk as well as the season them mock and quick fi say u can't cook then ready to "intervene" and ruin the pot. Dem no realise all know what I talking about. Most wait till them cook the peas then then season the pot and no realise the milk no cook to the point where the flavour run in. They fail to realise coconut milk cook longer minutes actually gives a different and much better flavour to the pot than ever. You see it in the peas water and everything when it done and the smell is great from start to finish. You smell the flavour. Plus the green pepper 😁 is the secret to good rice and peas. U can use the yellow but I always try and have the green as well. When I don't have the green I approach the entire dish differently. A my mother teach me to cook and she learn from her grandma who if alive would be 140 odd year old.m and I'm in my early 30s ... So she carry the authentic Jamaican style from the 1800s and much earlier because a bay grandma's help raise and teach for hundreds a year's.
