    I made this! It came out PERFECT!! Funny story...my boyfriend for some reason thought the scotch bonnet I put in the rice was a little tomato (It was a red one) since he couldn't wait until I served him and took a taste while I wasn't looking. Needless to say he bit into the whole thing and immediately regretted it! Scotch bonnet bit back!!!.. After he composed himself and was able to to feel his tongue again.. he enjoyed the rice and peas with curry chicken I made.

    It took me years to perfect Rice/Peas.
    My husband is Jamaican and of course I try to cater to his cultural foods for the past 25+ years.
    Measuring was the key for me to master it!

    I transcribed the recipe. Hope it helps 😇!
    Place raw red beans (enough for 6 people) and about 6 cloves of garlic in a large pot. Cover and soak overnight in a large pot.
    Boil together on high/max heat.
    Meanwhile:
    2 scallions
    1 bonnet pepper
    ~16 twigs of thyme
    Wash all the veggies!
    Slice the scallion and pound with a knife to release the juice.
    Add to the boiling mixture. Cover with a lid.
    Next, add the following All are approximate ( 😂 🤔)
    1 teaspoon black pepper
    1 Tablespoon seasoning salt
    1 heaping Tablespoon Flavor Rice (I live in Florida so I used the green Sazon seasoning offered by Knorr. Badia has a similar one too)
    20-21 pimento seeds (It is allspice seeds. Ground could do, too. )
    Stir.
    Add to the rolling boil mixture. Cover with a lid.
    Add about 1.5 (a likke) teaspoon butter.
    Allow boil for 30 to 45 minutes.
    ** WASH THE RICE, UNTIL THE WATER IS CLEAR. Only add the rice after the beans are cooked.
    Add about 1 cup warm water immediately after rice is added to the boiling pot. Turn down to medium heat. Allow to steam, about 20 minutes.
    After 20 minutes, turn down to low heat. Steam again for 20 minutes.
    Should be done and come out like his ... I hope. 😅

      @@Harlem2SoCal i try avoiding amazon at all costs. Slowly it’s becoming a monopoly. Instead going to the store buying Sazón should work. I used it for the Curry Chicken!

      May I ask what kind of Rice & how much, 2 cups? It looked like 2 or 2½ cups to me. How much water did you cook the beans in?

      @@debbiecoyne My household usually use Jasmine rice as it holds liquid better than Basmati. Looks like 2 dry cups to me. He cooks for 6 adults. Equated to 2 cups when I saw the directions for Basmati brand. I am in the USA, unsure if it is offered in your area!

      Depends on your fire, type of peas etc. But you just wanna make sure they’re cooked (soft - but not squigy soft).

    I clean my chicken 3 or 4 times with vinegar and lemon juice rincing and washing then rincing again then washing and the rice, I clean it like an ocd mod mon. I go as far as alikkle dish soap on the rice and rinse after the 3rd or 4th regular rinse 😉 👍 Great video big up ya selves!

    The best reason to wash your rice is to reduce arsenic for those with cultures heavy on rice. The starch on the unwashed rice is what makes the rice water murky like that usually.
