    This Sticky Toffee Pudding recipe is an irresistible combination of sweet, moist cake and rich caramel sauce, perfect for a cozy night in or a restaurant-style dessert experience at home.     Ingredients:
    For the Pudding:
    • 300g dark brown sugar
    • 150g melted unsalted butter
    • 3 eggs
    • 350g plain flour
    • 1 teaspoon baking powder
    For Boiling the Dates:
    • 459g seedless dates (chopped)
    • 1 tablespoon bicarbonate of soda
    • 1 tablespoon mixed spice
    • 1 tablespoon vanilla extract or vanilla sugar
    • 500ml water
    For the Caramel Sauce:
    • 100g white sugar
    • 1 tablespoon unsalted butter
    • 250ml double cream
    Instructions:
    Step 1: Prepare the Dates
    1. In a medium saucepan, combine the chopped dates, 500ml of water, 1 tablespoon bicarbonate of soda, 1 tablespoon mixed spice, and 1 tablespoon vanilla extract (or vanilla sugar).
    2. Bring the mixture to a boil, then simmer for 10-12 minutes until the dates are soft and the water has thickened slightly. Set aside to cool.
    Step 2: Make the Pudding Batter
    1. Preheat your oven to 180°C (350°F). Grease and line a baking dish or cake tin.
    2. In a large mixing bowl, whisk together 300g dark brown sugar and 150g melted butter until well combined.
    3. Add the eggs, one at a time, whisking until smooth after each addition.
    4. Gradually fold in 350g of plain flour and 1 teaspoon of baking powder. Mix until you have a smooth batter.
    5. Once the date mixture has cooled, fold it into the batter. Mix well until fully incorporated.
    Step 3: Bake the Pudding
    1. Pour the batter into the prepared baking dish.
    2. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    3. Remove from the oven and let the pudding cool slightly in the dish.
    Step 4: Make the Caramel Sauce
    1. In a small saucepan, melt 100g white sugar over medium heat, without stirring. Swirl the pan gently as the sugar melts and turns a deep amber color.
    2. Once fully melted, add 1 tablespoon of unsalted butter and whisk until combined.
    3. Slowly pour in 250ml double cream while whisking continuously. Let the sauce simmer for 2-3 minutes until thickened.
    Step 5: Serve
    1. Cut the pudding into portions and drizzle generously with the warm caramel sauce.
    2. For an extra touch, serve with a dollop of whipped cream or a scoop of vanilla ice cream.
