    INGREDIENTS:
    🔹 8 large lemons
    🔹 ½ cup Kosher salt
    🔹 2 tablespoons of sugar
    🔹 2 tablespoons pepper corns
    🔹 4 to 5 dry bay leaves
    🔹 Fresh lemon juice of 7 to 8 lemons, (about 2 ½ cups of fresh lemon juice)

      What I do not get ,how do you lose weight on that diet? I can see it being real food for you but not for weight loss. Too many carbs. Your thoughts? Ty

    ❤❤❤Loved this! I adore lemons! I just started adding sliced lemons to the bottom of the roasting pan when I am roasting a chicken because they become a fantastic edible garnish or treat and add extra umami to your drippings for the best tasting gravy. I adore the flavors of Mediterranean dishes.

    I'm so happy I found your channel! I love Mediterranean food. Can you please reply so I know how long I can store these lemons after the month long wait of pickling them? My neighbor generously gave me several large bags of the most delicious lemons I've ever tasted. I've made three batches of limoncello and still have more lemons to use. Thanks for your reply.

      Properly stored in the fridge, salt-preserved lemons can keep for a good 6 months. It is important to use a good canning jar with a tightly closed lid, and make sure the lemons are well submerged in the lemon juice. Some sources say they will last a good year, that may be, but I like to play it safe!

    I find myself only cooking your recipes. I searched your site a couple weeks ago and found this recipe. I had to insert a small drinking glass into my jar to keep my lemons submerged. I would love to try with honey or monkfruit. Praying they turn out.

      Hi Laura! I really wish I could help but but I’m really not an expert in this area 🙁. I recommend you talk to a nutritionist to help you out. But I will say there are a lot of great tasting and hearty recipes that are filling but with low calories

    This is also in your book, "The Mediterranean Dish", but the nice thing about preserving them is- how many lemons (and limes) turn rock hard before you get to use them, so (I) end up throwing them away?

      I stay away from sugar & don't even like sweet things so I get it for those trying to steer clear of it. Sugar serves many purposes in cooking/baking. In baked goods, sugar ensures moisture. In canning/preserving fruits/veggies (tomatoes)sugar encourages juice to come out. Honey might work but forget Stevia or Monkfruit -I MIX 1Tbsp sugar into my salt with a fork, and that works great for me. Sugar also disappears as it gives the friendly bacteria something to feed on & will not leave you with a sweet-tasting end result=)
