    we slice our lemons and dehydrate them. we bag them up and use them in teas. Some of the dried slices get ground in the blender with sugar to make sweetened lemon powder. I do the salt in the jar also but we only use the peels for that. use a veg peeler to get strips of peel, then layer a jar with salt and peels till full. vacuum seal the jar. the rest of the lemon gets pulsed in the blender and we water bath can that. We are super limited on freezer space so all of our preserve methods are shelf stable. hope this helps someone.

    A tip I’ve learned ... soak your non organic vegetables & fruit in baking soda water for five minutes or so. I sprinkle a few tablespoons in warm water to dissolve then add some cool water.
    Rinse well. It removes/dissolves the pesticides, etc. Let air dry and store or eat. I actually do this to all my fruits and veggies. Especially my strawberries!

      @@kt65199with lots of sugar or honey. Lol. I made lemon peel candy and both kids and grandparents asked for a jar. So I’ll be trying to preserve a batch in sugar and cinnamon. 🤷‍♀️

    I have a bad habit of buying Lemons & Limes just to have on hand in case I might need one. Problem is I don't use them very often and they usually end up going bad in the bottom of the fridge.
    Once they get to the stage where I won't use them, I throw them into a freezer ziplock bag and keep them in the freezer.
    Why would I freeze Lemons that I'm not planning to use? Glad you asked!
    If I'm expecting company, I will pull a bunch of Lemons & Limes from the freezer and throw them in a pot on the stove, add some cinnamon and water and bring them to a slow boil.
    Makes the place smell amazing!

    Wonderful video! To add another tip- I put lemon peels (or orange peels) into white cleaning vinegar for surface cleaning around the house. Fill a jar with peels (or what you have) fill jar with the vinegar, let sit a few weeks. Strain the peels. I do the same with olive oil (not my good stuff) haha. Lemon- or orange- peels into a jar, pour oil over & let sit a few weeks. If using fresh peels, you may want to burp the jar daily for several days or you’ll end up with a huge mess like I did. 😊

    Oh I miss Meyer Lemons! My neighbour in California had a tree that was prolific. Each week I headed over with my wicker basket and picked my week's worth. When I moved back to Canada she looked into mailing me a box but it was going to cost a fortune! LOL..

    Very timely! The lemons on my dwarf meyer lemon tree have all ripened at once and I’ve been wanting to try making preserved lemons. Of course, my favorite thing to do with lemons is your lemon ice cream recipe. I’m afraid that doesn’t last very long in my freezer, though!

    The idea of preserving the lemons in a mason jar with spices, etc sounds lie a great idea, but what happens when the gasses build up and the top of the jar puckers outwardly? Wouldn't it be wiser to use a fermenting jar? I don't know and am asking for a bit of advice as I don't want an exploding mason jar as I was leery to open mine when the mason jar lid appeared to have a pressure under it. I have followed techniques like this demo in RR's videa and encountered the same outcome. Any advice is appreciated. Thank you. Respectfully posted 😄

    Good ideas, but I make lemon ice cubes out of my lemon tree fruits. Just get some organic eggs and after they are eaten, use those clear plastic trays as molds for casting the lemons into lemon cubes and string in a freezer baggie.

    I first peel the lemon with a peeler and I add the peels in a little jar with plain water and I have lemon water to add to ice tea then I slice up the lemons and freeze them.
    If I was just using 1 or 2 lemons, I would squeeze out all the juice then I place the lemons that I squeeze in a bowl with plain water and I use a fork to mash it. I let the lemon sit in the water and have lemon water that way.

    I love the video. But if you don't use the pulp for fermenting why not ferment the peels after juicing.

    Candied lemon peel using those Salted/rinsed pieces, just dip into sugared water let harden and then if you choose sprinkle a bit more sugar on them. These actually are quite PRICEY buying in a store.

    I use the zest and juice then put the leftovers in water which makes a nice lemon flavored water..after that I cut the pieces and put them in the disposal or throw them on the plants..

      … absolutely … and the meat of the lemon is also delicious … don’t waist it … some people only use the juices of the lemons to ferment in, rather than adding water … if you do add water, make sure it is unclorinated, because chlorine can inhibit the fermentation process ..

    Great tips, thank you! Question: With the fermented lemons, you mention to eat the peel, but what can we do with the flesh?

      Make sure to rinse the lemon first...you can eat the flesh, I don't like the texture or the flavour as much as the peel though, but in cooking a tagine or slow bake I think it would melt in and be fine.

      I believe they will last in the freezer a good 3 to 4 months. Maybe longer.

      You can use whatever you wish. I personally try not to use plastic containers due to microplastics getting into our food.

    Keep lemons in vegetable drawer free of any container, just loose, they will last a month atleast.

    You did not cut the ends off of the lemons before preserving them in the salt. It is important to do that so that the ends, which carry the largest amounts of bacteria, are excluded from the preservation process.

    Couldn't you just juice the skin on lemons then just preserve the peels? Seems simpler.
