@@Vidyarvind26💯Correct eno is not gd for our health, coz it contains limbu phool (citric acid) it gives arthritis, sometimes in emergency it's ok to take, but if you're regularly, having breakfast in which eno is added is not at all gd for our health, i would say let's eat naturally fermented food where we don't need too add soda , just by adding 2tblspn to 1/4 cup urad dal and 1tsp methi seeds, helps in natural fermentation no gas effects, it's a gr8 medicine too.
Interesting comment thread about Eno and alternatives. Surely if we add hing then there’s no need to worry about feeling bloated & gaseous. Is that correct?
Like many said eno once in a while is ok. But if you insist on not using it, add around 1/3 cup urad dal while soaking. After grinding let it ferment for 8/10 hrs...there no need of eno then!

One tip for your idli steamer.. add a piece of lemon in the water and the steamer will loose the darkness and shine like new.. I too use the same steamer so thought of sharing..💜
We make these idlis taking equal portions of moong dhal,urad dhal.dont use curds and eno out of the question! We add a little chopped ginger,green chillies,curry leaves,jeera to the batter and the idlis come out just soft and taste delicious!
Seems to be perfect easy to make & whatever u add veg , green chily carat u clean small pice also v well not keeping in bowl any ingredients . Many recepy I found participant do not clean

You can add baking soda (khane ka soda) too if unflavoured eno is not available readily at home.

Add for 1thali add 1/4 tsp sodabicarb and 1 to 2tbl of lemon juice.

Normally we add 1:2 ratio of urid dal and rice.. so is it ok to add same ratio of urid and moong dal instead of taking equal portions?
Do you need to ferment this batter of urad dal & moong dal or can we use instantly?
