A suggestion for your egg on an English muffin - to speed things up. I have a round 'Tupperware' that I scramble my egg inside with egg white. That way it comes out just about the same size as the muffin. Using regular eggs (no whites) gives a moist egg. Microwave just 1 plain scrambled egg, for 1 minute. 2 eggs needs 2 minutes.
I use egg whites + a regular egg. It tends to puff up a bit, so you need to squish down on the muffin to eat it. To add more protein, I scramble in either cottage cheese or greek yogurt (plain) and then microwave it for 2-1/2 minutes. However, it does make breakfast quicker to make AND the egg is nice and moist.

Protein pancakes are also delicious and filling. The other day I ate three with just a drizzle of syrup topped with blackberries.
