Buckwheat Focaccia | Easy No Knead

✨️EASY BUCKWHEAT FOCACCIA with pesto and parmigiano ✨️
This flagrant focaccia has a good rise, lots of holes, and it's super crispy on the outside. Easy to make and healthier! Give it a go!
INGREDIENTS
300g buckwheat flour
300g all-purpose flour
10g salt
2 tsp instant yeast
1 tbsp sugar
4 tbsp olive oil
500g warm water
Extra:
oil for greasing the dough and tray
pesto* and parmigiano for topping
》In a mixing bowl, combine all ingredients. The dough will be sticky and lumpy. Perform 4 folds by stretching the dough and turning the bowl 3 times.
》Let the dough rise for 40 to 50 minutes in a warm place. Drizzle the surface of the dough with olive oil, add pesto, and grated parmigiano. Poke holes all over with your fingers and bake it at 220C for 20 to 25 minutes. Let it cool down for a little bit before slicing it. That's it! Enjoy!
*PESTO RECIPE
50g pine nuts
80g basil
50g parmesan or vegetarian alternative
150ml olive oil
2 garlic cloves
Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally. Put into a food processor with the basil, parmesan, olive oil, and garlic cloves. Whizz until smooth, then season to taste.
