    Just made this today along with the topping for 4 people and it was subtly aromatic and simply delicious! I tried eye-balling the portions he had on his pan and try to adjust the spaghetti sauce to my liking. Fantastic stuff! Glad I came across this gem.

    Si può contestare il burro, ma non l'ha chiamata aglio e olio, ma semplicemente pasta di mezza notte, e uno ci mette quello che vuole a mezza notte. detto questo, finalmente uno che sa cucinare davvero. Pochi gesti semplici ma precisi. Anche e proprio nella semplicità si vede già chi sa cucinare davvero e chi fa le cose a caso. Complimenti

      L'Oste e il sacrestano Channel scusa ma chiamare poco quella percentuale di burro ... mi pare tirare l'acqua al proprio mulino. Inoltre, cosa c'entra il burro con il rosmarino è tutto da discutere.

      Fla Giul un conto è l'accostamento burro e salvia di cui il veneto (e non solo) ne è ghiotto (ad es. sui tortelli di Veleggio) ed un conto è il rosmarino che incontra il burro più che altro nelle patate o qualche arrosto. Sulla pasta il burro è meglio accompagnarlo con la salvia ... appunto.

    1. Cook pasta in a large pot (seen in any pasta making video)
    .
    2. Heat up olive oil with a crushed piece of garlic, adding and removing herbs along the way. What herbs? Literally whatever you have fresh.
    3. Add spicyness with peperoncino.
    4. Use pasta water (basic pasta making ingredient, well explained in almost any pasta video) to start thickening the sauce, but also to prevent oil from burning.
    5. Add the pasta in a way that will transport a bit of the pasta water to the pan.
    6. Start the mantecatura (flipping the pasta in the pan) to begin the emulsification.
    7. Add butter to bring together the sauce and finish the emulsification.
    8. Serve with bread crumbs and grated cheese for some added oomph.
    9. Enjoy the aroma and spicyness on a simple midnight dish.

      Salty water in another frying pan is best for this. To obtain the starchy pasta water. Big pot of fresh water will not make 'pasta water'.

      I have a problem adding herbs and spices haphazardly largely because of the inconsistent results. In my pantry I have various and ai dry of spices from different cultures so it’s very unpredictable when cooking. Herb wise, I keep a staple of cilantro and green onion. I find adding a bit of Asian influence like seapsame oil and or soy sauce produces a pleasant flavour profile along with the other ingredients. Pasta is very versatile.

    Suggerimento di youtube del 2023 ma devo dire molto azzeccato. È un bravo cuoco perché gestisce bene i tempi e non fa cose inutili. Quelli che criticano inutilmente purtroppo lo fanno perché ancora non hanno capito che in cucina non conta "questo non va con quello" (sennò staremo ancora mangiando solo carne arrostita sul fuoco🍖 ) ma il risultato. Se mangio quella pasta ed è buona allora il cuoco è bravo, semplice.

    I was hungry and followed this as best I could! Had no basil so I used fresh oregano instead. Had olive oil and ground red pepper flakes for spice. I think the most important ingredient is real Parmesan Reggiano cheese, which I had. I may have had the skillet too hot. Started at medium on my electric range, but turned it down to medium low as the herbs were browning. Snuck in a good local sausage to top it off as well.

      l'animaccia sua e li mia che me lo so guardato pure e adesso c'ho fame! TH-cam dovrebbe tutelarmi filtrando tutto ciò che è alimentare dalla mezzanotte fino alle 5:00. Cmq complimenti per la ricetta
