Best Italian Tomato PASTA SAUCE RECIPE - Sugo al Basilico
    INGREDIENTS:
    Extra virgin olive oil
    Onion
    Celery
    Carrot
    75-100g/2.6 - 3.5oz fresh basil leaves
2.5kg/10.42 cups Homemade passata/Store bought OR Peeled/chopped Italian tomatoes
    UTENSILS:
    Sharp knife
    Chopping board
    Hand blender
    Medium - large size pot
    Wooden spoon
    METHOD:
    1. Tomato basil pasta sauce is made with a “Soffrito” which is a blend of fresh ingredients used at the very beginning of the recipe.
    2. To make the soffrito, chop up 1 carrot, 100g onion and 1 celery stalk (including the leaves!).
    3. Add all of these ingredients into the base of a hand blender with 100ml of extra virgin olive oil, until it becomes beautiful and creamy, like a puree. This will form a flavoursome base for your tomato basil pasta sauce.
    4. Next, turn the stove on to a very gentle heat and place the pot on top. Add 3-4 tablespoons of EVOO and pour in the soffrito mix.
    5. Gently stir the soffrito so it covers the base of the pot, cover it with a lid and leave it to simmer for 15-20 minutes.
    6. If you are using chopped or peeled tomatoes, blend them up so they become a beautiful thick passata. If you are using homemade or store bought passata to make your tomato basil pasta sauce, then you can skip this step!
    7. After ten minutes, the soffrito will start to darken in colour. Stir it using a wooden spoon (making sure it is not burning) and then leave it to simmer for at least another 5 minutes.
    8. When the soffrito is ready, mix through the tomato passata and stir very well using a wooden spoon.
    9. Sprinkle 10g/2.2 teaspoons of rock salt and some black pepper and mix through.
    10. Now, just cover the tomato basil pasta sauce with a lid and leave it to simmer slowly for 1-1.5hr, remembering to stir it every now and then.
    11. After 1hr, remove the lid and leave it for another 30-45min, simmering it without the lid.
VINCENZO’S PLATE: It is important to let the sauce simmer without the lid so that the sauce does not become watery and by uncovering it, the steam will leave the pot and allow the sauce to thicken even more.
    12. The finishing touch for this perfect homemade tomato and basil sauce is adding fresh basil at the very end. You can cut this up small or large depending on your preference - just make sure you don’t cut it with a knife! Add it with your hands before mixing through and leave this to infuse while the sauce is still hot - but the stove is now off.
    HOW TO SERVE:
Enjoy this tomato basil pasta sauce however you like it! Use it with your favourite pasta, enjoy it on a pizza base, smother it over your chicken cacciatore, no matter how you use your sauce, it will add another whole level of flavour to your next meal.
    E ora si mangia, Vincenzo’s Plate…Enjoy!

this is the best tomato sauce on the planet. i’ve been making it this way ever since the video came out. i must confess i do take 2 small cloves of garlic and make it into a paste with some sicilian sea salt adding it to soffritto after it has cooked for 15-20 minutes. always use the san marzano tomatoes i process them in a food mill, perfect consistency every time. blending the vegetables with the extra virgin olive oil for the soffritto is brilliant. there are other tomato sauces out there that are very good, this one is simply the best. well done Vincenzo. greetings from Long Island. - Tim

@@samcohen1625 I made it with garlic, and added a light amount of other herbs (oregano, but more of a mix), mostly just adding basil at the end. It was very good, though I prefer a sauce with a bone/meat in it and to cook longer. I'll be doing the blending step w/celery+carrots+onion+olive oil from now on, for sure.

@@simonmonty7171 yes if you have never had him me made speghetti sauce with fresh Italian bread. Hot preferably with butter. The sauce in a bowl so you can dip the bread in and hopefully have some homemade meatballs. You don’t need speghetti!! That’s a meal itself!! My kids always fought over who got to dip the first piece of bread to test the sauce to see if it was ready for a bowl! I’m making a pot of homemade speghetti sauce today and my youngest daughter is waiting impatiently with my grandson for grandpa to bring them some because they are sick. So naturally grandma is cooking for them. I haven’t made my homemade speghetti sauce in about 4 years since I had a stroke so the whole family is waiting for it. I’m making meatballs and sweet Italian sausage to go with it and sent my husband for some fresh bread! We live close to Philly, but he won’t go over the bridge to get real fresh Italian bread. But we’ll suffice with what he finds locally in south Jersey! It’s been simmering for a few hours and has a few more to go to be perfect!!!

I've been blending the soffritto for years and it really does make a huge difference. With enough olive oil it acts as an emulsifier and it also acts somewhat like a blond to light brown roux where the flavors develop and then helps thicken the sauce. It's a no brainer also from a production standpoint. It's much easier to blend than to do a small dice by hand.

I've been trying to make a great pasta sauce for many years, having flirted with buying San Marzanos in the past, experimenting with all sorts of things, and nothing's got it as good as this. The mixture of the pureed, gently cooked soffrito, pre-blended good tomatoes (I bought some 2.5kg San Marzano tins) and gentle hour with the lid on seem to be the big secrets. A truly lovely sauce, thank you so much!

I'm making this know with my tomatoes from te garden. I made the Sofritto like you did and chopped up the tomatoes and mixed them with the soffrito. After 20 minutes all of it was blend together. Little salt and pepper and let it simmer for an hour. Then the basil went in and let it mildly simmer it without the lid for another hour. Then I seasoned it to taste. It's insane that good.... Oke I didn't use tinned Italian tomatoes / passata but it turned out great.

I have just tasted it now, I have been making it over the last three hours and I have to say my sauce is thick and it tastes amazing if only I could send you a picture I would, because I have taken a photograph of it, tomorrow as it is late in Australia, I will make my own gnocchi and I will put the sauce on the gnocchi and of course it will be topped with grated parmigiano regianno, I only wish that you could taste it because it tastes amazing. It really does if it didn’t I would say so.

Hi, Vincenzo! Huge fan here from the Philippines. I have made a passata so that I can eat pasta (Preferably linguine) at work when it's lunch time. Quick question here: Would it be ok if I can omit the sofrito from the recipe for the true, made by a nonna, pasta sauce? Also, I used dried basil since basil is like luxury in the country that I live in. Would that be ok? Thanks if you will answer this.
Also, you are the reason why I started loving and appreciate pastas like a true Italian. Thanks for your videos!

    • @vincenzosplate
      @vincenzosplate  5 หลายเดือนก่อน

Ciao! Grazie mille for your kind words and support-I'm thrilled to hear that you've found a love for pasta through my videos!
Regarding your question, omitting the sofrito from the pasta sauce recipe should be fine. While sofrito adds depth of flavor, you can still achieve a delicious sauce without it. As for using dried basil, it's a common substitution when fresh basil isn't readily available, so don't worry! Just be sure to adjust the quantity to taste, as dried herbs can be more potent than fresh

Vincenzo, we are from the exact same region.. WELL, my family is from the same region (Abruzzo) and while my mom was born in the US, her nonna lived in Italy and she made the best sauce. My mom was very young when she lost her, but she will never be able to untaste her sauce and meatballs. I make such a good sauce, but she lately has told me nothing compares to her nonna! Of course I understand, but sadly she has no tips for me since she was so young. My mom doesn't cook anymore (she's nearing 70 and still works and is just always tired) and I just can't find a recipe that makes her happy. I know she used fresh tomatoes and basil, and I've tried and tried. I love the blended sofrito in this video and I will be trying it this week! Please let me know if you have any other tips. I've been cooking since I was a kid, am a fantastic cook and my mom has always said I should have a restaurant, but I'm just broken that I'll never compare to nonna 😢😭
