    Looks amazing. Thank you for removing the membrane. Drives me crazy to see it left on.
    If you add the wood chunks on top of the snake, you can space them so that you keep a nice rolling smoke for the full burn time. It reduces the number of times you have to open the smoker...

    What the hell is wrong with you finishing them is the oven 🤣 j/k I do it too when pressed for time. Not like they’re getting anymore smoke flavoring on the smoker and you’re saving fuel.

      Exactly! Now once I wrap either brisket or ribs I always finish in the oven. Saving the charcoal for the next cook!
