Some of them better, and some worse, than others. But I have NEVER watched one as in depth, and thorough, as this one. Legit straight forward, and very clear detailed instructions for smoking a good brisket! I have to add one thing. Anything you smoke, the better cut of meat you buy, the better the outcome. And most importantly, the pricier cuts show a little more mercy on rookies. They are harder to dry out or turn into beef roast because of all that marble that choice doesn't have. Even with that, learn with cheap choice brisket first! You get that right, when you buy prime it's going to be 🔥.

It is the key to making a brisket go from good to great. I like how you cold-smoked in the beginning. I’ve spent 7 years studying, traveling to Texas bbq places, hung out with pitmasters picked their brains, catered events for free(they pay for meats) just to gain experience over and over again. if a video like this was produced at the start of my journey I would have probably cut out a few years and made great bbq sooner. Experience is important and teaches you how to deal with weather, unforeseen circumstances, and time management. I don’t regret it since I met a ton of great people, but ultimately this video gives you the in depth details that go from a good brisket to a great one. Attention to detail makes the difference. I've been grilling over 50 years. Last year I drove 150 miles to buy a good conditioned, Oklahoma Joe Longhorn Offset. After making a few tweeks, I've been smoking meats several times a month (even in Pittsburgh winter-I have a gazebo). I have been following several of the TH-cam Gurus but no one has taken the time to fill in all of the gaps. I've cooked 4 briskets to date with varying degree of success. I'm doing my 5th brisket for the 4th of July and with your guidance in hand, I expect the results to be spectacular. Thanks for the love!

Not opposed to it in anyway, i just dont know that ive ever felt it add something. However your Mustard and pickle juice binder got my brain GOIN! @MeatNGreetBBQ no for sure I'm rethinking my entire stance on binders. I never tend to have issues with my rub sticking. I tend to wait for the meat sweats to start grabbing onto the rub. But lately I've had a couple cooks puzzle me a bit. I think I need to dial back the temps a bit in the beginning stages and, well, give my rub a headstart at that conversion. Keep it up!

As I have been on brisket journey for 6-7 yrs and ruined sev I appreciate this. Finally moved onto a custom offset, smaller 18” diameter, so I have found to keep temps down 15degrees is over bigger ones. One thing Id rec is please please try the thermoworks system! I have the pens also…BUT, you can have those two areas probed thru entire cook, always monitoring, can see graph for another data/perspective point. Its such a pleasant exp. Today I am going for best Ive ever made, and recapping this vid again for notes.
Also, I have resorted to using 1.5days for brisket. Ideally Id rest for 4-6hrs prob (exp would say). But that means up at 2am. So I cook like 11am-11pm then heated hold rest overnight. Ninja countertop oven reheat mode moves no fans at all and at 170 oscillates 162-174 and holds meat at like 158-160. Lunch next day is heavenly, wish I could post pics

I just finished my 3rd attempt at a Brisket and it was incredible. My brisket looked night and day different from the last one after using your trimming video. @MeatNGreetBBQ no. Truly, thank you! I just bought my first offset smoker about a month ago. My first cook was a brisket and it was amazing, but I'm always looking to up my game. Your videos are awesome and explain things really well. And honestly, one of my favorite aspects is how humble you are about it all.
I really enjoyed your video. Here are 4 pro tips to make your amazing brisket even better: 1) don't forget to season your sides of your brisket. 2) I highly recommend brining the brisket in 64 oz of beef brotha and 1 cup the night before. this tip comes from Myron Mixon. i found it makes a thicker smoke ring 3) Take a bread pan and smoke your beef tallow. that way it's also infused with smoke flavor. it tastes way better 4) Use meat probes in the whole time so you always know what the temp is vs having to check every 20 minutes at the end
Thanks for watching and supporting! 1. I don’t season sides of briskets. 2. Brining is the most unorthodox thing I’ve ever heard lol. I would highly advise against doing that unless you’re making corned beef/pastrami. In short, you couldn’t pay me to brine a brisket. Brining & injecting is for competing. This is back yard craft bbq here my friend. 3. I don’t like smoking beef tallow. I’ve smoked many many gallons worth of beef tallow over the last 15 years and prefer a clarified unsmoked tallow. My briskets (as most do) get enough smoke flavor. I don’t need extra from smoked tallow. Also, I prefer the texture of unsmoked tallow. 4. Meat probes are for cheaters 😅. I don’t need a meat probe and if you’ve watched my other videos I am anti meat probes. I think learning how to bbq without probes makes the most complete Pitmaster. I say all this with extreme respect. But given this is my channel in which I teach people, I wouldn’t feel comfortable subscribing to any of this advice or advocating for it, and wouldn’t pass it on to our other friends who enjoy the content. Much needed video for me my man. I definitely learned a ton. Most importantly I learned that a brisket could be done before 203 or 205 degrees. Ive tempted my briskets at 190 or 195 and they were very tender but I always thought that I had to take them higher and always overcooked them when I did. Brisket came out pretty good, followed all of your steps. I just accidently messed up my fire at hour 7ish and got it too hot, I replenished all 4 logs when I shouldn't have since the temp was already steady but next time , it should come out even better because I won't make that fire mistake!

Legit straight forward, and very clear detailed instructions for smoking a good brisket! I have to add one thing. Anything you smoke, the better cut of meat you buy, the better the outcome. And most importantly, the pricier cuts show a little more mercy on rookies. They are harder to dry out or turn into beef roast because of all that marble that choice doesn't have. Even with that, learn with cheap choice brisket first! You get that right, when you buy prime it's going to be 🔥.

I’ve spent 7 years studying, traveling to Texas bbq places, hung out with pitmasters picked their brains, catered events for free(they pay for meats) just to gain experience over and over again. if a video like this was produced at the start of my journey I would have probably cut out a few years and made great bbq sooner. Experience is important and teaches you how to deal with weather, unforeseen circumstances, and time management. I don’t regret it since I met a ton of great people, but ultimately this video gives you the in depth details that go from a good brisket to a great one.

I've been grilling over 50 years. Last year I drove 150 miles to buy a good conditioned, Oklahoma Joe Longhorn Offset. After making a few tweeks, I've been smoking meats several times a month (even in Pittsburgh winter-I have a gazebo). I have been following several of the TH-cam Gurus but no one has taken the time to fill in all of the gaps. I've cooked 4 briskets to date with varying degree of success. Big Frizz- youve done it again. Having cooked my fair share of briskets, one thing i know is there is ALWAYS something we can gain from other experiences. I personally dont like using a binder. Not opposed to it in anyway, i just dont know that ive ever felt it add something. However your Mustard and pickle juice binder got my brain GOIN!

@MeatNGreetBBQ no for sure I'm rethinking my entire stance on binders. I never tend to have issues with my rub sticking. I tend to wait for the meat sweats to start grabbing onto the rub. But lately I've had a couple cooks puzzle me a bit. I think I need to dial back the temps a bit in the beginning stages and, well, give my rub a headstart at that conversion.

As I have been on brisket journey for 6-7 yrs and ruined sev I appreciate this. Finally moved onto a custom offset, smaller 18” diameter, so I have found to keep temps down 15degrees is over bigger ones.
One thing Id rec is please please try the thermoworks system! I have the pens also…BUT, you can have those two areas probed thru entire cook, always monitoring, can see graph for another data/perspective point. Its such a pleasant exp. Today I am going for best Ive ever made, and recapping this vid again for notes.
Also, I have resorted to using 1.5days for brisket. Ideally Id rest for 4-6hrs prob (exp would say). But that means up at 2am. So I cook like 11am-11pm then heated hold rest overnight. Ninja countertop oven reheat mode moves no fans at all and at 170 oscillates 162-174 and holds meat at like 158-160. Lunch next day is heavenly, wish I could post pics

I really enjoyed your video. Here are 4 pro tips to make your amazing brisket even better:
1) don't forget to season your sides of your brisket.
2) I highly recommend brining the brisket in 64 oz of beef brotha and 1 cup the night before. this tip comes from Myron Mixon. i found it makes a thicker smoke ring
3) Take a bread pan and smoke your beef tallow. that way it's also infused with smoke flavor. it tastes way better
4) Use meat probes in the whole time so you always know what the temp is vs having to check every 20 minutes at the end

1. I don’t season sides of briskets.
2. Brining is the most unorthodox thing I’ve ever heard lol. I would highly advise against doing that unless you’re making corned beef/pastrami. In short, you couldn’t pay me to brine a brisket. Brining & injecting is for competing. This is back yard craft bbq here my friend.
3. I don’t like smoking beef tallow. I’ve smoked many many gallons worth of beef tallow over the last 15 years and prefer a clarified unsmoked tallow. My briskets (as most do) get enough smoke flavor. I don’t need extra from smoked tallow. Also, I prefer the texture of unsmoked tallow.
4. Meat probes are for cheaters 😅. I don’t need a meat probe and if you’ve watched my other videos I am anti meat probes. I think learning how to bbq without probes makes the most complete Pitmaster.
I say all this with extreme respect. But given this is my channel in which I teach people, I wouldn’t feel comfortable subscribing to any of this advice or advocating for it, and wouldn’t pass it on to our other friends who enjoy the content.

Much needed video for me my man. I definitely learned a ton. Most importantly I learned that a brisket could be done before 203 or 205 degrees. Ive tempted my briskets at 190 or 195 and they were very tender but I always thought that I had to take them higher and always overcooked them when I did. Brisket came out pretty good, followed all of your steps. I just accidently messed up my fire at hour 7ish and got it too hot, I replenished all 4 logs when I shouldn't have since the temp was already steady but next time , it should come out even better because I won't make that fire mistake!
