    This #corncasserole actually tastes like creamed corn. Creamy, rich, Southern-style cream corn! It's the clear winner at the holiday table and in your kitchen! It only takes like 20 minutes to prep. #Sidedishes don't get much better than that!
    It’s hard for me to even think about #creamedcorn without thinking of my Grandmother Kinser. She served it on the side of just about any meal she could, only hers was straight out of the can and topped with a little extra butter…and salt. As a kid, I loved it. Like, LOVED it. But now, I know there’s a better way. Instead of using creamed corn from a can, we’re going to whip up our own. And, it’s going to be really easy and really delicious.
    INGREDIENTS:
    2 (16 ounce) cans whole kernel corn, strained
    6 tablespoons unsalted butter, separated
    1 yellow onion, finely diced
    1 1/4 cup heavy cream
    1 (8 ounce) package cream cheese, softened
    1 large egg, slightly beaten
    2 tablespoons granulated sugar
    1 1/2 teaspoon Kosher salt
    1/2 teaspoon black pepper
    3/4 cup crushed Ritz crackers (about 15 crackers)
    1 1/2 cup freshly grated Cheddar or Colby Jack cheese
    HERE'S HOW YOU MAKE IT:
    1. BREAK UP THE CORN - breaking up the half corn in the blender is going to help thicken up the base a bit and then we’ll leave the other can whole.
    You can break up the kernels in either a blender or a food processor, pulsing just until they are broken up, and stopping before the corn becomes a puree.
    2. SAUTE THE ONION - To kick off the sauce we’re going to melt down some butter and sauté a chopped onion
    3. MELT THE CREAM CHEESE - Add a little cream to the pot along with the cream cheese, and stir the mixture until the cream cheese has melted into the cream. This will go by faster if your cream cheese is room temperature going in!
    4. ADD REMAINING INGREDIENTS - Remove the pan from the heat, and add your seasoning, as well as the egg. Stir to combine, add the corn into the saucepan, and move on to the topping.
    5. ASSEMBLE - First, coat your crushed Ritz crackers in butter. Add the filling to the casserole dish, and top with cheese and crackers.
    6. BAKE - Cover the casserole with foil and bake for 30 minutes at 325°F, then you’ll remove the foil and bake uncovered for the last 15, allowing the crackers on top to get nice and toasty.
    ABOUT THE BAKING DISH
    This casserole is best baked in a 2-quart rectangular baking dish, but if you do not have one, modifications can easily be made, but note, the cook time will vary.
    If you are using a standard 9×13″ casserole dish, your casserole filling will not be as deep as it would in a small 2-quart baking dish and it will likely cook faster. Therefore, you should probably decrease the cook time by about 5 minutes or so if using a standard 9×13″ casserole dish.

    I made this last year for Thanksgiving. We sent a plate over to my uncle who was working. He called my mom to thank her for the food and the 1st thing that came out his mouth was that corn was sooooo good! I never cook anything for holidays so I felt pretty good to hear that!     My only addition, based on another's comment, was diced bits of half a red bell pepper. These added a nice color touch & a slight but welcome kick.

    I made this yesterday and it was fantastic! My little brother who loves the one with jiffy mix asked for more tonight for supper, he really liked it! I did not add onions, sugar or the cheese on top. He doesn't care for onions, I prefer it more savory than sweet and dislike melted cheese on the top of casseroles and it did not need any of those 3 in order to be the creamiest, most delicious corn I'd ever eaten! I used 4 ears of fresh left over cooked sweet corn for the recipe and think fresh corn makes the dish. I Will make it again tho even with frozen or canned corn because it was that great of a dish. I don't think it really even needs sugar, mine set up wonderfully without it and that Ritz cracker topping gets so wonderfully crisp! It really sets it off, it was a trip to Flavortown! Thanks so much for a family favorite from here on out!

Then, remove the plastic wrap, add the topping just before baking, cover with aluminum foil, and bake it for about 40 minutes at 325°F. The cook time is slightly increased because the casserole filling will go into the oven cold. Then, uncover it and bake for 10-15 minutes more.

      I'm sorry I'm just seeing this! Not sure why the comment was held back ☹️ With this casserole, the casserole base can be made a day in advance, kept refrigerated, and then you would just add the topping the day you plan to back it. Note, you'll probably find you have to extend the bake time if it's going into the oven cold!

    I’m not sure if you will see this right now but mine is in the oven at the moment. I had to use buttermilk because heavy cream is sold out EVERYWHERE. I just hit the 30 min mark & uncovered it & it looks very jiggly & wet… what do I do?!

      Ingredients

      Instructions
      Preheat the oven to 325° and have ready a greased, 2-quart casserole dish or baker.
      Place half of the strained corn into a blender or food processor. Pulse until the corn kernels are broken up. Set aside until ready to use.
      Add 4 tablespoons of the butter to a large saucepan over medium heat. Do not allow the butter to burn. Add the onion and sauté, stirring often, just until softened -- about 5 minutes.
      Add the heavy cream and softened cream cheese to the saucepan, and stir until the ingredients have melded and remove from the heat.
      Add the egg, sugar, salt, pepper, and all of the corn to the saucepan and stir to combine. Transfer contents of the saucepan to the prepared dish.
      In a microwave-safe bowl, melt the remaining 2 tablespoons of butter. Add the crushed crackers, and stir to combine.
      Sprinkle the cheese evenly over the corn mixture and top with the crushed crackers. Cover with aluminum foil and bake for 30 minutes. Uncover, and bake for an additional 15 minutes. Allow to cool slightly, serve, and enjoy.

      Well if you leave the corn out it wouldn’t be a corn casserole. I may have missed something along the way but she is sharing her recipe for “Corn Casserole “. So I think you are going to need some corn to make this casserole. If you take the corn out and use macaroni, you need to change the name of the recipe.
