I'm so glad I watched your video first. I added 5 eggs, added dairy free heavy whipping cream to my water, and 4 tablespoons of butter. For the frosting, I added cream cheese, vanilla extract, and a little monkfruit, warmed it up and whipped it. My cupcakes are delicious!
I also tried the chocolate frosting. It was so bad I couldn't eat it, but the cake was good. I just replaced coconut oil and water with butter and milk and added vanilla extract.
me again, i wonder if warming the frosting would help spread it better. i did taste test the frosting but was just like you, that i wasnt good but it wasnt bad. still watching as i comment.
I love that you used hacks for the keto cake mix! I haven’t seen anyone else do this at all. I wonder if it would work to use a can of pumpkin and some pumpkin spice to make pumpkin cupcakes? I know people do that with a regular boxed cake mix and it works but with keto I’m not sure 🤔 also the ounces in these boxes are less than a regular one so it would take some experimenting I guess. Although they’re expensive cake mixes so if it failed that would be a bummer!!
It might would work but just scoop and mix a little at a time and add an extra egg or a little extra almond flour to bind and hold everything together? Maybe I will try it??
Finally. I normally put pudding in my keto mix but couldn't find a video to see if it worked. I randomly came across yours without even trying. Keto icing is gross so i just make my own or buy the chocolate pillsbury sugar free kind and call it a day lol. So now I want to try a chocolate cake with chocolate pudding mix hack because i love a good moist chocolate cake

Avocado oil will give you a better rise and more fluffy texture.
I usually add a little bit of vanilla extract to canned frosting. Do you think that would improve the flavors of both?

Also, if you don't sift the cake mix at least three times it's going to be a gritty mess.

I can not stand the keto frosting. I make a whipped topping with added cream cheese in it.
