Duncan Hines Keto Cake Review (Clean, GF, SF, Keto, Vegan)

  • I was surprised to read this ingredient label, pleasantly surprised. Most big companies go with cost-effectiveness over good clean ingredients so imagine my surprise when this yellow cake mix was GF, SF, and keto-friendly with decent ingredients. I thought why not, let's give it a try. In the video, you'll see the adjustments I made to the recipe. Feel free to make it any flavor you want or just a plain yellow cake. I also think several different icings would be great with this. It is sweet so maybe small pieces or mini cupcakes would be best. It is dense in texture as most gluten-free cakes are but it’s also very moist and delicious. You could lighten it up with a whip cream style icing and fruit.
    Ingredients:
    1/2 tsp cake batter extract (optional)
    1/2 cup coconut milk (Or water like instructions state)
    3 tbsp coconut oil (melted)
    3 eggs (or substitute for Vegan version)
    Directions:
    In a large mixing bowl combine eggs (or egg replacer) milk (or water) coconut oil, cake batter extract, and box mix. Mix well until there are no lumps and place in a pre-greased baking tin or muffin tin. In a 350 degree oven bake for 24-28 minutes if using an 8” or 9” pan. If using cupcake tins, bake for 20-22 minutes. Let cool and enjoy or ice and decorate as you desire.

    Whipping egg whites or full eggs will make the texture lighter.
    For a better crumb, I have added brown rice flour or tapioca flour with stellar results! Thanks for sharing.
